Apple Loaf with Frosting

Perfect Fall Dessert

With fall quickly approaching I am super excited to get to baking all the fall treats. One of the first is this delicious apple loaf with cinnamon vanilla frosting. To me, there is nothing better than a honey crisp apple in the fall.

 This loaf is super fluffy with the juiciness from the apple. The frosting just ties it all together and creates the perfect fall dessert.

Vegan butter: you can use any vegan butter of your preference. If you aren’t vegan, you can use traditional butter. Be sure it is MELTED.

Sugar: I used traditional white sugar in my recipe. You can use any granulated sugar of choice.

Nondairy milk: any nondairy milk will work. I used unsweetened almond milk. If you aren’t vegan, traditional milk should also work.

Apple: any apple will work. Be sure to chop it finely. If you aren’t a fan of apple, you can really add anything to this. Also, you can just leave it as is.

I haven’t tested any other flours besides the almond flour and all-purpose flour combination. These two flours together work very well to create an ultra-fluffy cake. If you are gluten-free, you could substitute for a 1:1 gluten-free all-purpose flour. 

Many people always ask questions about the applesauce in the recipe. I always use unsweetened applesauce. If you have never baked with it, the applesauce just gives a super moist and fluffy texture. I typically use it to replace oil in any recipe.

In my opinion, applesauce is better in recipes than oil. However, if you don’t have applesauce or want to use it, oil should also work. You could also try pumpkin

puree.

TIP: coat the chopped apple in flour before adding to the batter. This will prevent the apple from sinking to the bottom.

Ingredients:

  • Vegan butter

  • Sugar

  • Applesauce

  • Nondairy milk

  • Baking powder

  • All-purpose flour

  • Almond flour

  • Apple

  • Optional: Cinnamon

Recipe:

  • 3 tablespoons vegan butter

  • 1/3 cup sugar

  • 1/3 cup applesauce

  • ¼ cup nondairy milk

  • 2 teaspoons baking powder

  • 2/3 cup all-purpose flour

  • ¼ cup almond flour

  • ½ cup chopped apple

  • Optional: 1-2 teaspoons cinnamon

Directions:

1.    Preheat your oven to 350 degrees Fahrenheit.

2.    Line your baking pan with parchment paper or spray with cooking spray.

3.    In a small bowl melt your butter.

4.    Transfer to a larger bowl and add in the sugar, applesauce, and nondairy milk.

5.    Stir well.

6.    Add in the baking powder, all-purpose flour, almond flour, and cinnamon.

7.    Stir until a batter has formed.

8.    Fold in your chopped apple.

9.    Transfer to baking pan and bake for 40 minutes.

10. Once cooled add the frosting.

I used my homemade vegan cinnamon vanilla frosting.

 Be sure to store this in the refrigerator or freezer. The loaf should last up to 5 days in the refrigerator. You can also store this in the freezer. It should last for up to a month.
