Creamy Vegan Peanut Butter Chocolate Chip S’mores Cookie

Combining Three Of The Best Things Into One, In These Vegan And Gluten-Free Cookies

Think of these as the best cookie EVER. It’s all my absolute favorite things combined into one. Peanut butter + chocolate chips + marshmallows what more could you need?!

If you are allergic to peanuts/ any nut, you can substitute a seed butter in place of the peanut butter.

I love recipes that are super simple and to the point and that is definitely these. They only take 12-15 minutes to bake and no more than 10 minutes to mix all the ingredients together. Everything comes together in one bowl so no huge messes or tons of dishes to clean either!

The flour used in these is almond flour, so they are also grain and gluten-free. I used coconut sugar as my sweetener to keep it refined sugar-free, however, any granulated sugar will work (white, brown, etc.)

I also use applesauce in this recipe in place of oil/butter to keep it a little healthier. I love using applesauce in my recipes as it is pretty inexpensive and creates the perfect texture for so many baked goods.

Ingredients

  • Flax eggs

  • Coconut sugar

  • Peanut butter (or any nut/seed butter)

  • Applesauce

  • Baking powder

  • Almond flour

  • Chocolate chips

  • Marshmallows

For the marshmallows I used the brand Dandies. I buy mine from Whole Foods. Not all marshmallows are vegan as they contain gelatin, so these ones are my favorite to use!

For the chocolate chips just about any chocolate chip will work. You could also chop up your favorite chocolate bar and add it into the mixture.

Recipe

  • 2 flax eggs

  • 1/3 cup coconut sugar

  • ½ cup peanut butter

  • 1/3 cup applesauce

  • ½ teaspoon baking powder

  • 1 ½ cup almond flour

  • ½- 1 cup chocolate chips

  • ½ cup marshmallows

Directions

  1. Start by creating your flax egg. One flax egg is 1 tablespoon water to 3 tablespoons flax seed meal. For two eggs, just double it.

  2. In a separate bowl add your coconut sugar, peanut butter, and applesauce.

  3. Once the flax eggs have come together and have an egg texture add to the mix.

  4. Stir until combined.

  5. Add in the baking powder and almond flour and stir again.

  6. Fold in the chocolate chips and marshmallows.

  7. Get your cookie tray and line with parchment paper.

  8. Add a cookie scoop (or about 2 tablespoons) of cookie dough.

  9. Press flat with your hand.

  10. Bake at 350 degrees Fahrenheit for 12-15 minutes!
