Funfetti Sugar Cookie Bars

Simple Alternative to Cookies

If you are looking to switch it up from the traditional funfetti cookies, you have to try these funfetti sugar cookie bars. They are so simple to make, everything is mixed in one bowl and only takes 20 minutes to bake. These are always a hit with my family and friends!

If you leave the frosting out or opt for a healthier frosting, this recipe has relatively low sugar. There is only ¼ cup of maple syrup added to the base. I like keeping my recipes on the lower sugar side, so you don’t spike your blood sugar too much.

There are countless different varieties you could make with this recipe as well. You can substitute the sprinkles for just about any add-in.

Applesauce: I haven’t tested any substitutes for this. If you are looking to substitute this, I would recommend mashed banana or pumpkin puree. I always use unsweetened applesauce as I find the recipe is sweet enough without sweetener from the applesauce. However, if you would like, you can use sweetened applesauce.

Maple syrup: I like using maple syrup as it has a subtle sweet flavor. You can use any liquid sweetener of your choice. Be sure it is a liquid sweetener such as agave or honey as a granulated sweetener will alter the recipe.

Almond flour: I haven’t tested any other flours in this recipe. I like using almond flour to keep this recipe grain-free. If you are looking to substitute the almond flour, I would try oat flour. The measurements will be different so add slowly and continue to stir.

All-purpose flour: as stated before, I haven’t tested any other flours in this recipe. If you would like to substitute the all-purpose flour, you could try a 1:1 gluten-free flour. You could also try more almond flour. Again, the measurements will be different so add slowly.

Sprinkles: you can use any sprinkles of your choice. You could also leave the sprinkles out and add in whatever you want.

Frosting: the frosting is optional. I used a store-bought frosting and added mashed strawberries to get a natural pink color.

Ingredients:

  • Applesauce

  • Maple syrup

  • Baking powder

  • Almond flour

  • All-purpose flour

  • Sprinkles

  • Optional: frosting

Recipe:

  • ½ cup applesauce

  • ¼ cup maple syrup

  • ½ teaspoon baking powder

  • 2/3 cup almond flour

  • 2/3 cup all-purpose flour

  • 1/3 cup sprinkles

Directions:

1.    Preheat the oven to 350 degrees Fahrenheit.

2.    Line a baking pan with parchment paper or spray with cooking spray.

3.    In a bowl combine the applesauce and maple syrup. Add in the baking powder, almond flour, and all-purpose flour. Stir well.

4.    Fold in the sprinkles. Transfer to the baking pan and bake for 20 minutes.

5.    Allow to completely cool before adding the frosting. I used a store-bought frosting and added mashed strawberries to it for the pink color.

6.    Optional: top with more sprinkles.

Be sure to store the bars in the refrigerator or freezer. I prefer to store mine in the freezer for an ice cream bar consistency.
