No-Bake Protein Brownies

Fudgy, High Protein Snack

I am always looking for quick and easy recipes that are high in protein and these brownies are just that. They take only 5 minutes to mix everything together. The longest part is just waiting for them to harden.

These are perfect as a snack, dessert, or even breakfast. They are relatively low in sugar, while also containing protein and healthy fats.

I love how customizable these are. You can switch up the yogurt flavor, protein powder flavor, add-ins, and toppings. You can really customize these to however you want.

 Vegan yogurt: I used plain, unsweetened cashew milk yogurt. Any yogurt will work. If you aren’t vegan, you could also use normal yogurt.

Sugar: I used coconut sugar to keep this refined sugar free. Any GRANULATED sugar will work. If you use a liquid sweetener such as maple syrup the outcome will be different.

Applesauce: I used unsweetened applesauce. You can use sweetened; I just find the sugar makes it sweet enough. If you don’t want to use applesauce you can substitute with mashed banana or more yogurt. This may alter the texture.

Nondairy milk: I used unsweetened almond milk. Any nondairy milk will work. If you aren’t vegan, normal milk works too.

Cacao powder: I like using cacao powder for the extra nutrients it provides. If you don’t have cacao powder, cocoa powder works too.

Protein powder: I used vanilla flavored protein powder. Any flavor will work. Mine was plant-based and I haven’t tested any whey-based powders. Keep in mind if yours is whey based you may need to alter the measurements.

Almond flour: I like using almond flour as it’s grain-free and gluten-free. If you want an alternative, you could add more protein powder instead, use coconut flour, or oat flour.

Ingredients:

  • Vegan yogurt

  • Sugar

  • Applesauce

  • Nondairy milk

  • Cacao powder

  • Protein powder

  • Almond flour

    Optional:

  • Chocolate chips

  • Sprinkles

Recipe:

  • ¼ cup yogurt

  • ¼ cup sugar

  • 1/3 cup applesauce

  • ¼ cup nondairy milk

  • ¼ cup cacao powder

  • 2/3 cup protein powder

  • 2/3 cup almond flour

  • ½ cup chocolate chips

  • 3-4 tablespoons sprinkles

Directions:

1.    Line a baking pan with parchment paper or spray with cooking spray.

2.    In a bowl combine the yogurt, sugar, applesauce, and nondairy milk.

3.    Add in the cacao powder, protein powder, and almond flour. Stir until a dough is formed. Place in the freezer for an hour.

4.    If you’re adding chocolate and sprinkles on top, add once the hour is over. Place back in the freezer for 30 minutes.

 Be sure to store the brownies in the refrigerator or freezer. The brownies should last up to 5 days in the refrigerator. You can prep a large batch and store in the freezer. It should last for a month minimum.
