Oatmeal Chocolate Chip Bars

Oatmeal Cookies in Bar Form

I have recently come to love oatmeal chocolate chip cookies and decided to make them into bars. These bars did not disappoint and if you love anything with oats you will love these.

The bars aren’t overly sweet but rather just enough to satisfy your sweet tooth. They are also made with relatively healthier ingredients and can be low in sugar if you use sugar-free chocolate and a sugar substitute such as monk fruit.

 I like adding a glaze to the bars using powdered sugar and non-dairy milk. However, I have made them without the glaze, and they taste just as good.

You can omit the chocolate chips in this recipe as well and add in anything you want such as nuts or raisins. I would love to hear any variations you try!

Applesauce: I always use unsweetened applesauce. Ideally, you want the only ingredients to be water and apples. You can use sweetened applesauce; however, I find it to be sweet enough using unsweetened applesauce.

Vegan butter: any vegan butter will work. You can also try liquid oil or normal butter if you aren’t vegan.

Almond butter: you can use any nut or seed butter of your choice. Be sure it is on the runnier side as compared to chunky.

Sugar: I like to use coconut sugar as it is refined sugar free. Any granulated sugar will work such as monk fruit or white sugar.

Almond flour: I haven’t tested any other flours in this recipe.

All-purpose flour: I haven’t tested any other flours in this recipe.

Chocolate chips: any chocolate chips will work.

Ingredients:

  • Applesauce

  • Vegan butter

  • Almond butter

  • Sugar

  • Baking powder

  • Oats

  • Almond flour

  • All-purpose flour

  • Chocolate chips

  • Optional: cinnamon + powdered sugar

Recipe:

  • ½ cup applesauce

  • ¼ cup vegan butter

  • ¼ cup almond butter

  • ½ cup sugar

  • 2 teaspoons baking powder

  • 1 cup oats

  • 1/3 cup almond flour

  • ¼ cup all-purpose flour

  • 1 cup chocolate chips

  • Optional: 1-3 teaspoons cinnamon

  • Optional: glaze (powdered sugar + water or nondairy milk)

Directions:

1.    Preheat the oven to 350 degrees Fahrenheit.

2.    Line a baking pan with parchment paper or spray with cooking spray (I used a loaf pan).

3.    In a small bowl melt the butter. Transfer to a larger bowl and add in the applesauce, almond butter, and sugar. Stir to combine.

4.    Add in the baking powder, oats, almond flour, and all-purpose flour. If adding cinnamon, add now. Stir until combined. Fold in the chocolate chips.

5.    Transfer to baking pan and bake for 35-40 minutes or until toothpick comes out clean.

6.    If adding the glaze, allow the bars to completely cool and drizzle the glaze evenly on the bars.

Be sure to store the bars in an airtight container in the refrigerator. The bars should last up to one week. You can store in the freezer to last longer.
