Orange and chocolate is a combination I see literally all the time. I’ve never baked anything with this combination and really wanted to try especially with it being summer. This cake turned out amazing! The orange flavor is very subtle, and the frosting paired with the fluffy cake is too good.

My go-to frosting is my healthy chocolate frosting made from sweet potatoes. You would never know there is a vegetable in the frosting because of how creamy and delicious it is. However, any chocolate frosting will work. You could also do a glaze with powdered sugar and almond milk if you prefer that.

Vegan butter: you can use any vegan butter of your preference. If you aren’t vegan, you can use traditional butter. Be sure it is MELTED.

Sugar: I used stevia in my recipe. You can use any granulated sugar of choice.

Orange Juice: if you aren’t a fan of orange, you can substitute lemon juice and switch to a vanilla frosting or a glaze.

I haven’t tested any other flours besides the almond flour and all-purpose flour combination. These two flours together work very well to create an ultra-fluffy cake. If you are gluten-free, you could substitute for a 1:1 gluten-free all-purpose flour.

Many people always ask questions about the applesauce in the recipe. I always use unsweetened applesauce. If you have never baked with it, the applesauce just gives a super moist and fluffy texture. I typically use it to replace oil in any recipe.

In my opinion, applesauce is better in recipes than oil. However, if you don’t have applesauce or want to use it, oil should also work.

Ingredients:

  • Vegan butter

  • Sugar

  • Applesauce

  • Orange Juice

  • Baking powder

  • All-purpose flour

  • Almond flour

  • Chocolate Frosting

Recipe:

  • 3 tablespoons melted vegan butter

  • 1/3 cup sugar

  • 1/3 cup applesauce

  • ¼ cup orange juice

  • 2 teaspoons baking powder

  • 2/3 cup all-purpose flour

  • ¼ cup almond flour

  • About 1/2 cup frosting

Directions:

1.    Preheat oven to 350 degrees Fahrenheit.

2.    Line a baking pan with parchment paper or spray with cooking spray.

3.    In a bowl melt your butter.

4.    Add the butter to a larger bowl along with the sugar, applesauce, and orange juice.

5.    Stir to combine.

6.    Add in the baking powder, all-purpose flour, and almond flour.

7.    Stir until a batter is formed.

8.    Transfer to baking pan and bake for 22-24 minutes.

9.    Once completely cooled, add frosting. I used my Healthy Chocolate Frosting Recipe.

10. Optional: top with orange zest.

Allow to completely cool before eating. Store these in the refrigerator. They should last up to 5 days. You can also store them in the freezer if you want them to last longer. If you store them in the freezer, allow to thaw for 10-15 minutes before eating or warm up in the microwave for 15-20 seconds.
