Protein Pumpkin Pie Bites

No-Bake Fall Treat

Now that fall is in full swing all my desserts and snacks revolve around pumpkin. These protein pumpkin pie bites are the perfect on-the-go snack that will actually satisfy you. These can be eaten by themselves, or, I add them on top of a yogurt bowl.

These have the perfect soft texture with a delicious cinnamon sugar coating. You could use the premade store-bought cinnamon sugar or simply just mix the two ingredients together.

Personally, I like to store these in the freezer. They taste like pumpkin ice cream bites to me. Especially when they are covered in chocolate!

Sugar: you can use any granulated sugar of choice.

Nondairy milk: any nondairy milk will work I used unsweetened almond milk. If you aren’t vegan, traditional milk works as well.

Protein powder: I used a plant-based vanilla protein. Any protein will work. I’d recommend a subtle flavored one, so it doesn’t overpower the whole recipe.

Cinnamon: pumpkin pie spice would also work.

Applesauce: if you don’t want to use applesauce, you can replace it with more pumpkin puree.

This recipe only has ¼ cup of added sugar plus the small amount that the bites are coated in. When divided by the number of bites this recipe makes, each bite has little to no sugar. This is why I love this as a mid-day snack or even a few as a breakfast!

The protein in these will keep you fuller for longer as compared to a snack without protein. For healthy fats, you could add in hemp seeds, chia seeds, flax seeds, etc.

I also have added chocolate chips in these, and they taste delicious! Another option would be to coat these in chocolate or white chocolate. Any of these work so well and the options are endless.

Ingredients:

  • Pumpkin puree

  • Sugar

  • Applesauce

  • Nondairy milk

  • Almond flour

  • Protein powder

  • Cinnamon

Recipe:

  • ½ cup pumpkin puree

  • ¼ cup sugar

  • 1/3 cup applesauce

  • 2 tablespoons nondairy milk

  • ½ cup almond flour

  • ½ cup protein powder

    Coating:

  • 2 tablespoons cinnamon

  • 2 tablespoons sugar

Directions:

1.    In a bowl add in the pumpkin puree, sugar, applesauce, and nondairy milk. Stir well.

2.    Add in the almond flour and protein powder.

3.    Stir until a dough forms.

4.    Scoop and roll all the dough into a ball.

5.    Place in the refrigerator for 20 minutes.

6.    After the 20 minutes make the cinnamon sugar mix and coat each bite in it.

Be sure to store these in the refrigerator or freezer. The bites should last up to 5 days in the refrigerator. You can prep a large batch and store in the freezer. They should last for a month minimum.
