The Perfect Quick + Easy Recipe

This single serve brownie recipe is the perfect recipe for those times you are craving something sweet but don’t want to bake a whole batch. This brownie is made with super simple and healthier ingredients. You would never be able to tell this is dairy and gluten free.

I love topping mine with vegan vanilla ice cream once it’s out of the oven. You can top yours with whatever you want, and I promise you this recipe won’t disappoint!

Vegan butter: any vegan butter will work. Be sure it is MELTED. If you aren’t vegan, you can use normal butter. Oil should also work. Be sure the oil is liquid.

Coconut sugar: I prefer to use coconut sugar to keep this recipe refined sugar free. However, any granulated sugar will work. For example, white sugar or stevia. Using a liquid sweetener such as maple syrup won’t work.

Applesauce: I always use unsweetened applesauce. Ideally, you want the ingredients to just be apples and water. I find the recipe is sweet enough using unsweetened applesauce. If you don’t want to use applesauce you can replace it with mashed banana.

Cacao powder: I like using cacao powder for the added nutrients. However, normal cocoa powder also works.

Almond flour: I haven’t tested any other flours in this recipe. I like to use almond flour so that it is grain free and gluten free. The closest option would be oat flour if you are looking to replace the almond flour.

Ingredients:

  • Vegan butter

  • Coconut sugar

  • Applesauce

  • Baking powder

  • Cacao powder

  • Almond flour

Recipe:

  • 2 tablespoons vegan butter

  • 3 tablespoons coconut sugar

  • 3 tablespoons applesauce

  • ¼ teaspoon baking powder

  • ¼ cup almond flour

  • 3 tablespoons cacao powder

Directions:

1.    Preheat the oven to 350 degrees Fahrenheit.

2.    Line a single serve baking pan or normal baking pan with parchment paper or spray with cooking spray. Set aside.

3.    In a bowl melt the butter. Once melted, add in the coconut sugar, and applesauce. Stir well.

4.    Add in the baking powder, almond flour, and cacao powder. Stir until a batter is formed.

5.    Transfer to the baking pan. Bake for 20-22 minutes.

6.    Optional: top with vegan ice cream or melted chocolate.

If you are using a normal sized baking pan, be sure to block off the remainder of the pan so the batter doesn’t spread out. If the batter spreads out throughout the whole pan you will be left with a super thin brownie. Since this is a single serve recipe, it will not take up the entirety of a normal sized pan.
