S’mores Bars

Melty Marshmallows + Chocolate

We all know s’mores are a summer and fall staple. The combination of marshmallows and chocolate is just so delicious. These bars are always eaten in my house within a day they are that good!

If you want, you can add crushed graham crackers to these or any crushed cookie. There isn’t an exact measurement for it, just add however much you want.

 The same goes for the measurements for chocolate and marshmallow. You can add however much of little you want.

Vegan butter: any vegan butter of your preference will work. Make sure it is MELTED. Oil should also work to replace the butter. If you aren’t dairy-free/vegan traditional butter should also work.

Sugar: any granulated sugar will work (brown, white, coconut). Keep in mind if you use a brown or coconut sugar, the color of the bars will change because the sugar is darker. Do NOT replace the sugar with a liquid sweetener like maple syrup.

Nondairy milk: any nondairy milk will work (cashew, oat, almond). You can also use water or if you aren’t dairy-free/vegan traditional milk should also work.

Chocolate chips: any chocolate chips of your preference will work. You can also chop up a chocolate bar.

Marshmallows: any marshmallows will work. Be mindful that if you are vegan most marshmallow are NOT. I find mine at Whole Foods. Trader Joes also has vegan ones and so does Amazon.

I haven’t tested any other flours in this recipe. I wouldn’t necessarily recommend substituting either one. They work together to form a really fluffy texture. If you have nut allergies or are gluten-free, the closet flour I would recommend is oat flour.

Applesauce is another ingredient I never recommend substituting. While there are plenty of substitutions, in my opinion they never taste the same and the recipe doesn’t turn out the same. If you still want to substitute it however, mashed banana, pumpkin puree, or oil should work.

Ingredients:

  • Vegan butter

  • Sugar

  • Applesauce

  • Nondairy milk

  • Baking powder

  • All-purpose flour

  • Almond flour

  • Chocolate chips

  • Marshmallows

Recipe:

  • 3 tablespoons melted butter

  • 1/3 cup sugar

  • 1/3 cup applesauce

  • ¼ cup nondairy milk

  • 2 teaspoons baking powder

  • 2/3 cup all-purpose flour

  • ¼ cup almond flour

  • ½ cup chocolate

  • ½ cup marshmallows

Directions:

1.    Preheat oven to 350 degrees Fahrenheit.

2.    Line a 9x5 baking pan with parchment paper or spray with cooking spray.

3.    In a small bowl melt the butter.

4.    Transfer to a larger bowl and add the sugar, applesauce, and nondairy milk.

5.    Stir well to combine.

6.    Add in the baking powder, all-purpose flour, and almond flour.

7.    Stir until a batter is formed.

8.    Fold in the chocolate chips and marshmallows.

9.    Transfer to the baking pan and bake for 35-40 minutes.

Allow to completely cool before eating. Be sure to store in an airtight container in the refrigerator. It will last up to 5 days.
