Fudgy Brownies made from Wholesome Ingredients

My childhood brings back the best memories when it comes to snacks and desserts. That is why I HAD to recreate one of my favorites: the cosmic brownie. These were a staple when I was younger.

If you still want that nostalgic feeling and great tasting brownie but want to be a little healthier you have to try these ones! So many people have tried these and no one can even tell they are vegan or healthier. They are so fudgy and delicious.

The key ingredient in these is the chocolate tahini. It makes the taste so rich and chocolatey. I used the brand Soom Foods Chocolate Tahini and would highly recommend trying that out for this recipe. If you don’t have that, any nut butter would work. Almond butter or cashew butter would probably be the best.

The brownies are grain & gluten-free and have only ¼ cup of coconut sugar added.

For the sprinkles, I love buying fun colored sprinkle mixes from Tj Maxx. They are on the cheaper side and work perfect for this recipe.

Ingredients

  • Flax eggs

  • Chocolate tahini

  • Coconut sugar

  • Applesauce

  • Baking powder

  • Cacao powder

  • Almond flour

  • Vegan chocolate

  • Vegan yogurt

  • Sprinkles

Recipe

  • 2 flax eggs

  • ½ cup chocolate tahini

  • ¼ cup coconut sugar

  • ¼ cup applesauce

  • 1 teaspoon baking powder

  • 3 tablespoons cacao powder

  • ¼ cup almond flour

Frosting

The measurements do NOT have to be exact. Experiment to your liking with taste and texture.

  • 1/3 cup vegan chocolate (melted)

  • 3 tablespoons vegan yogurt

  • 1-2 tablespoons chocolate tahini

Directions

  1. Preheat the oven to 350 degrees Fahrenheit. Add parchment paper or add cooking spray to a lined 9x5 baking pan.

  2. Start by creating the flax egg. For one flax egg the ratio is 1 tablespoon of water to 3 tablespoons of flaxseed meal. For two eggs, just double it.

  3. In a separate bowl, add the chocolate tahini, coconut sugar, and applesauce.

  4. Once the flax eggs have reached an egg consistency add these as well.

  5. Stir until combined.

  6. Add in the cacao powder, almond flour, and baking powder.

  7. Stir well. Transfer to baking pan and bake for 30-40 minutes or until a toothpick comes out clean.

  8. While cooking, make the frosting.

  9. In a bowl melt the vegan chocolate. Once melted add the yogurt and tahini. Stir until combined. Set aside.

  10. Once the brownies have cooled (30-40 minutes) add the frosting and sprinkles.

  11. Store in the fridge & enjoy!
