Apple Spice Protein Bites
High Protein Fall Dessert
Fall is by far my favorite season when it comes to baking. Nothing beats the classic apple and pumpkin recipes. This week, I had a lot of leftover apples and decided to create more of a snack recipe.
These bites are packed with protein and healthy fats. They are relatively low in sugar so they could even be eaten for breakfast. I love prepping these at the beginning of the week to have on hand as a quick snack.
Applesauce: I always use unsweetened applesauce. Ideally, you want the only ingredients to be water and apples. You can use sweetened applesauce; however, I find it to be sweet enough from the sugar and the powdered sugar coating.
Almond butter: I prefer almond butter in this recipe; however, any nut or seed butter will work. Be sure it is on the runnier side rather than the chunky side. Ideally, you want the only ingredient to be almonds or whatever nut/seed you’re using.
Coconut sugar: I used coconut sugar to keep the recipe refined sugar free. However, any granulated sugar will work, for example, monk fruit or white sugar.
Almond flour: I haven’t tested any other flours in this recipe. I find the almond flour works well with the protein powder. If you’re looking to substitute the almond flour, you could try coconut flour or more protein powder. The measurements WILL BE different. Add slowly and stir as you go.
Protein powder: I used a vanilla plant-based protein powder. I haven’t tested whey-based protein. Any flavor protein will work; however, I would recommend sticking to a more basic flavor, so it doesn’t overpower everything else.
Cinnamon: you can omit this if you just want just apple bites. You could also use pumpkin pie spice for a more fall flavor.
Apples: any apple of your choice will work. I don’t peel mine for this recipe, however, you can if you prefer that.
Optional: powdered sugar: any powdered sugar will work.
Ingredients:
Applesauce
Almond butter
Coconut sugar
Almond flour
Protein powder
Cinnamon
Apples
Optional: powdered sugar
Recipe:
1/3 cup applesauce
¼ cup almond butter
¼ cup coconut sugar
¼ cup almond flour
¼ cup protein powder
1-2 teaspoons cinnamon (or any spices – cloves, nutmeg, ginger)
2/3 cup chopped apple
Directions:
1. Chop your apple of choice and set aside.
2. In a bowl combine the applesauce, almond butter, and coconut sugar.
3. Add in the almond flour, protein powder, and cinnamon. Stir until a dough is formed. Fold in the chopped apples.
4. Using a cookie scoop, scoop the mixture onto a plate. Place in the refrigerator for 1 hour to set. After the hour, coat in powdered sugar. If you aren’t coating the bites in powdered sugar, transfer to an airtight container to store in the refrigerator.
The bites should last up to one week. They can be stored in the freezer to last longer. Feel free to reach out with any questions!
