Breakfast Cookies

Quick, Easy, and Healthy

If you are one of those people who doesn’t have time to make breakfast in the morning this recipe is for you. These breakfast cookies are packed with nutrients and are super quick and easy to make. They are also super customizable.

These cookies are only sweetened with ¼ cup of maple syrup, so they are pretty low in sugar. They also have fiber and protein from the oats. The nut butter gives these plenty of healthy fats as well.

Every Sunday night I love to meal prep these for the week. They take 5 minutes to put together and only around 15 minutes to bake. I love topping mine with extra nut butter once they are done.

These are perfect for on-the-go. You can easily add them to a Ziploc bag or in any Tupperware. They can last awhile without being refrigerated so you don’t need to worry about that either.

This cinnamon raisin combination truly tastes like a cinnamon raisin bagel. You would never believe these are made with healthier ingredients and are lower in sugar.

These are the perfect breakfast or snack. There are tons of different variations of these you could make.

Some of my favorites are:

Using peanut butter and adding chocolate chips

Using peanut butter and adding blueberries

Adding in chia and hemp seeds for tons of protein

If you want these to have even more protein you could substitute some of the oats for protein powder. Any protein powder would work. I would recommend a chocolate or vanilla flavored one.

Nut butter: you can use any nut or seed butter you prefer. Be sure it is runny and not chunky.

Maple syrup: any liquid sweetener will work (agave, date syrup, etc.)

Oats: I used rolled oats. Quick oats will also work.

Raisins: if you aren’t a fan of raisins, you can omit them. You can add in whatever you want (chocolate, fruits, nuts, etc.)

Applesauce: this can be substituted with mashed banana.

Ingredients:

  • Nut butter

  • Applesauce

  • Maple syrup

  • Oats

  • Optional: cinnamon + raisins

Recipe:

  • ½ cup nut butter

  • 1/3 cup applesauce

  • ¼ cup maple syrup

  • 1 cup oats

  • 1 teaspoon cinnamon

  • ¼ cup raisins

Directions:

1.    Preheat your oven to 350 degrees Fahrenheit.

2.    Line a cookie sheet with parchment paper or spray with cooking spray.

3.    In a bowl combine the nut butter, applesauce, and maple syrup.

4.    Add in the oats and cinnamon.

5.    Fold in any add-ins you want.

6.    Scoop and add to cookie sheet.

7.    Bake for 12-15 minutes.

Allow these to completely cool before eating. Store them in a container in the refrigerator. If you make a larger batch and want them to last longer you can also store them in the freezer. If you store them in the freezer allow them to thaw for 10-15 minutes before eating!
