Brownie Banana Bread
Banana + Chocolate Lovers Dream
Banana and chocolate will always be one of my favorite combinations. I always have random leftover super ripe bananas to use up and had to create this recipe with them. It truly tastes like a brownie with the added hints of banana bread taste.
Everything can be thrown into a blender which is the best part. My least favorite part about baking is doing all the dishes. If you don’t have a blender, you can do this by hand or use a food processor.
The directions are listed if you are doing this by hand and not using a blender. However, they still apply when using a blender. You will start by adding the wet ingredients, blend, then add the dry ingredients and blend again. Use a rubber spatula to fold in the chocolate chips.
Vegan butter: any vegan butter will work. If you aren’t vegan, traditional butter should also work. Just be sure to melt your butter.
Applesauce: I always use unsweetened applesauce. Ideally, you want the only ingredients to be water and apples. You can use sweetened applesauce; however, I find it to be sweet enough using unsweetened applesauce.
Sugar: I like to use coconut sugar as it is refined sugar free. Any granulated sugar will work such as monk fruit or white sugar.
Chocolate chips: any chocolate will work. You can also substitute for nuts or any add-ins you want.
Cacao powder: cocoa powder also works.
Almond flour: I haven’t tested any other flours in this recipe.
All-purpose flour: I haven’t tested any other flours in this recipe.
This recipe requires ripe bananas. The bread definitely won’t taste as good if your bananas aren’t ripe because they won’t be as sweet. Also, the bananas are the only added sugar in this recipe.
If you want to make this and your bananas aren’t ripe there is a hack for that! Preheat your oven to 325 degrees Fahrenheit. Place them on a baking tray with the peel still on and cook them for 10-20 minutes it will depend how green your bananas are. Be sure to keep an eye on them and once they turn completely brown, they are ready to be taken out.
Ingredients:
Bananas
Vegan butter
Applesauce
Sugar
Baking powder
Cacao powder
All-purpose flour
Almond flour
Chocolate chips
Recipe:
3 bananas
1/4 cup vegan butter
1/3 cup applesauce
1/3 cup sugar
2 teaspoons baking powder
3 tablespoons cacao powder
1/3 cup all-purpose flour
2/3 cup almond flour
1 cup chocolate chips
Directions:
1. Preheat your oven to 350 degrees Fahrenheit. Line a baking pan with parchment paper or spray with cooking spray.
2. In a small bowl melt your butter. Add the bananas to a large bowl and mash with a fork. Add in the butter, applesauce, and sugar. Stir to combine.
3. Add in the baking powder, cacao powder, all-purpose flour, and almond flour. Stir until a batter is formed.
4. Fold in the chocolate chips. Transfer to the baking pan.
5. Bake for 35-40 minutes or until a toothpick comes out clean.
Allow to completely cool before eating. Be sure to store in a container in the refrigerator or freezer. This should last up to 5 days in the refrigerator.
