Carrot Cake Protein Bites

High Protein + No Bake

Who doesn’t love carrot cake in the spring? This recipe tastes just as good, however, doesn’t require you to turn the oven on and is packed with protein and healthy fats.

These make for the perfect snack/dessert to meal prep at the beginning of the week and have on hand for when you want something sweet but satiating.

I like to freeze mine and let it thaw for about 5 minutes to get an ice cream like dessert. Either way, these bites are super delicious and if you like anything carrot cake you will love these!

Applesauce: I always use unsweetened applesauce. Ideally, you want the only ingredients to be water and apples. You can use sweetened applesauce; however, I find it to be sweet enough using unsweetened applesauce.

Almond butter: you can use any nut or seed butter of your choice. Be sure it is on the runnier side as compared to chunky.

Sugar: I like to use coconut sugar as it is refined sugar free. Any granulated sugar will work such as monk fruit or white sugar.

Nondairy milk: I always use unsweetened almond milk. Any nondairy milk will work. If you aren’t vegan, traditional milk should also work.

Protein powder: I used a plant-based vanilla protein. Any flavor should work.

Almond flour: I haven’t tested any other flours in this recipe.

Spices: I used a mixture of cinnamon, cloves, and ginger. Any spices will work, and you can add as much or as little depending on your preferences.

Powdered sugar: you can use whatever powdered sugar you want. You can leave this out for a healthier option.

Optional: nuts + raisins: I like adding these for extra flavor + texture.

Ingredients:

  • Applesauce

  • Almond butter

  • Sugar

  • Nondairy milk

  • Protein powder

  • Almond flour

  • Spices

  • Carrots

  • Powdered sugar

  • Optional: nuts + raisins

Recipe:

  • ½ cup applesauce

  • ¼ cup almond butter

  • 1/3 cup sugar

  • 1-3 tablespoons nondairy milk

  • ½ cup protein powder

  • ½ cup almond flour

  • 1-3 teaspoons spices (I used cinnamon, cloves, and ginger)

  • ½ cup chopped carrots

  • ½ cup raisins

Glaze:

  • About ½ cup powdered sugar

  • About 3-6 tablespoons nondairy milk

These measurements will vary depending on the consistency you are going for. Add the liquid slowly and stir as you go.

Directions:

1.    In a bowl combine the applesauce, almond butter, sugar, and nondairy milk.

2.    Add in the protein powder, almond flour, and spices. Stir until a dough is formed. Fold in the carrots, raisins, & nuts (if using).

3.    Use a cookie scoop to scoop the dough onto a plate. Place in the refrigerator for 1 hour.

4.    After the after, make the glaze and coat each bite into the glaze.

Be sure to store the bites in an airtight container in the refrigerator. The bites should last up to one week. You can store in the freezer to last longer.
