Chocolate Filled Banana Bites

There’s nothing worse than those moments when you are craving something sweet but have nothing in your house to eat. These chocolate filled banana bites are the perfect thing to make sure this never happens. These bites take a maximum of 5 minutes to make and never disappoint!
These bites can easily be prepped on a Sunday and ready to eat for the whole week. They can last in the freezer for up to a month. They are perfectly satisfying from the sweetness from the banana and chocolate plus the healthy fats from the almond butter.
For this recipe, make sure your banana is somewhat ripe. It will taste a lot better, as the riper the banana is, the sweeter it tastes. My recipe makes about 6 bites. You can easily double or triple this recipe to make however many you want.
There are so many different combinations you can make. My favorites include:
Peanut butter cup: slice your banana, add chocolate yogurt, peanut butter, and coat in chocolate.
Berry flavor: slice your banana, add berry yogurt, nut or seed butter of choice, and coat in white chocolate.
Peanut butter and jelly: slice your banana, add the peanut butter, add jelly, and coat in chocolate.
Funfetti: slice the banana, add the yogurt, nut butter of choice, coat in chocolate and add sprinkles.
If you want these bites to be completely free of any added sugar, you can use no sugar added chocolate, or just omit the chocolate. They still taste super delicious without the chocolate and are a perfect snack or treat for kids!
Almond butter: you can use any nut or seed butter you prefer (cashew, sunflower, peanut, etc.)
Vegan yogurt: any nondairy yogurt will work. I used an unsweetened coconut milk based one. Traditional dairy yogurt will also work, I’d recommend using an unsweetened version.
Chocolate: any chocolate of your preference will work; you can melt chocolate chips or chop a chocolate bar. You can also use white chocolate as well.
The measurements for this recipe are an estimation. You really don’t need to measure anything. You can just add as much yogurt or almond butter as you want. Make sure to not over stuff the banana, as it will all just fall out the side.

Vegan yogurt
Recipe:
1 large banana
¼ cup vegan yogurt
3 tablespoons almond butter
1 cup melted chocolate
Directions:
1. Slice your banana into coin shaped pieces.
2. Place flat onto a plate.
3. Add half a teaspoon of yogurt and almond butter to only HALF the banana pieces.
4. Put the other half of the banana on top and place in the freezer for an hour.
5. After the hour, melt your chocolate and coat each banana bite in chocolate.
6. Let the chocolate harden in the freezer for 10 minutes.
