Chocolate Chip Cookie Dough Bars

Cookie in Bar Form

This is the perfect recipe for when you’re craving a cookie but don’t have to make a huge batch of them. These bars turned out way better than I thought they would, so I am so excited to share! If you love anything cookie dough or cookie related you have to try these.

You can add-in whatever you want. I like to add in sprinkles sometimes or vegan M&Ms. With Valentine’s Day coming up you could add festive sprinkles or frosting. The options are endless, and these bars will always turn out delicious.

I love that this recipe only has 1/3 cup of added sugar (minus the chocolate) it makes the recipe still taste delicious without being too sweet.

Sugar: any granulated sugar will work such as white sugar. Liquid sweetener such as maple syrup will not work in this recipe.

Vegan butter: any vegan butter will work. If you don’t want to use butter you can use oil, however, I find the butter works better. If you aren’t vegan, you can use traditional butter.

Almond butter: any nut or seed butter will work.

Applesauce: I use unsweetened applesauce. I wouldn’t recommend substituting the applesauce, however, if you really want to, the closest options would be mashed banana or pumpkin puree.

All-purpose flour: I haven’t tested any other flours. However, you could try oat flour or a 1:1 gluten-free flour.

Almond flour: I haven’t tested any other flours. However, you could try oat flour.

Chocolate chips: any chocolate you prefer will work.

White chocolate chips: vegan white chocolate chips can be hard to find. I always buy mine off Amazon! They are optional in this recipe.

Ingredients:

  • Sugar

  • Vegan butter

  • Almond butter

  • Applesauce

  • Baking powder

  • Almond flour

  • All-purpose flour

  • Chocolate chips

  • Optional: white chocolate chips

Recipe:

  • 1/3 cup sugar

  • 2 tablespoons vegan butter

  • ½ cup almond butter

  • 1/3 cup applesauce

  • 2 teaspoons baking powder

  • 1 cup almond flour

  • 2 tablespoons all-purpose flour

  • 1 cup chocolate chips

  • 1/3 cup white chocolate chips

Directions:

1.    Preheat the oven to 350 degrees Fahrenheit. Line a 9x5 loaf pan or baking pan of choice with parchment paper or spray with cooking spray.

2.    In a small bowl melt the butter. Transfer to a larger bowl and add in the sugar, almond butter, and applesauce. Stir well.

3.    Add in the baking powder, all-purpose flour, and almond flour. Stir until a dough is formed. Fold in the chocolate chips.

4..    Transfer to the baking pan and bake for 30 minutes.

Optional: once cooled top with melted chocolate.

Allow to completely cool before slicing into it. Be sure to store the bars in the refrigerator or freezer. The bars should last up to 5 days in the refrigerator. You can prep a large batch and store in the freezer. It should last for a month minimum.
