Applesauce: I used unsweetened applesauce. You can use sweetened if you want.
Vegan yogurt: I used an unsweetened cashew milk based yogurt. Any yogurt will work. You want it to be on the thicker side rather than runny.
Sugar: I used monk fruit sweetener in mine. You can use any sweetener of choice. You can even leave out the sugar as the bites get sweetness from the Oreo and powdered sugar.
Vanilla paste: I prefer this as compared to vanilla extract but either will work.
Protein powder: I used a plant-based vanilla protein powder. Any flavor will work. Some of my favorite protein powders
Almond flour: If you don’t want to use almond flour, you can substitute for more protein powder or coconut flour.
Coconut flour: If you don’t want to use coconut flour, you can substitute for more protein powder or coconut flour.
Oreos: any sandwich type cookie will work.
Powdered sugar: You can skip the glaze if you’d like or use any powdered sugar substitution.
Ingredients:
Applesauce
Vegan yogurt
Vanilla paste
Sugar
Protein powder
Almond flour
Coconut flour
Oreos
Powdered sugar
Recipe:
1/3 cup applesauce
1/4 cup vegan yogurt
1 teaspoon vanilla paste
1/4 cup sugar
1/4 cup protein powder
1/4 cup almond flour
6 tablespoons coconut flour
1/4 cup Oreos (crushed up)
Directions:
In a bowl combine the applesauce, yogurt, vanilla, and sugar.
Add in the protein powder, almond flour, and coconut flour. Stir until a dough is formed. Fold in the crushed Oreos.
Use a cookie scoop to scoop the dough. Use your hands to roll them into balls. Place on a plate or tray and let sit in the refrigerator for at least 1 hour.
After the hour, coat in the powdered sugar glaze. This is optional. For the glaze, the measurements are about 1 cup powdered sugar to 3-4 tablespoons nondairy milk. Once coated allow the powdered sugar to harden for about 20 minutes, then enjoy!
I prefer to store my bites in the freezer however, you can also store them in an airtight container in the refrigerator. They should last up to one week. If you have any questions about this recipe, don’t hesitate to reach out!
