Chocolate Filled Sprinkle Cookies
Chewy, Chocolate, and Delicious
These cookies are definitely one of the top cookie recipes I’ve ever made. They are super chewy and so delicious. The chocolate filling really just takes these to the next level.
The base of these cookies can be used for anything. If you omit the chocolate filling and sprinkles you can add whatever you want. Oreos, traditional chocolate chip cookies, nuts, fruits, etc.
Everyone who has tasted these cookies has loved them. You would never know they are vegan and made with such simple ingredients. There is also no chilling of the dough. The longest part is just waiting for the chocolate to harden.
Vegan butter: you can use any vegan butter of your choice. Be sure it is MELTED. Oil should also work. If you aren’t vegan, traditional butter can be substituted.
Coconut sugar: if you don’t have coconut sugar, brown sugar can be substituted.
White sugar: you can substitute for any white granulated sugar such as monk fruit or stevia.
Sprinkles: any sprinkles will work. You can also omit these if you don’t want them.
Chocolate: you can fill the cookies with any chocolate you want. You can also fill them with any nut or seed butter such as Nutella, peanut butter, or literally anything else. You would still follow the same process of freezing the filling. If you do use a nut butter just scoop multiple tablespoons and freeze it separately.
I haven’t tested any other flours besides all-purpose flour. If you are looking to substitute it, the closest flour I would recommend is oat flour or a gluten-free all-purpose flour.
Ingredients:
Vegan butter
Coconut sugar
White sugar
Applesauce
Baking powder
All- purpose flour
Sprinkles
Chocolate
Recipe:
Makes 5-6 large cookies
1/3 cup vegan butter
¼ cup coconut sugar
¼ cup white sugar
2 tablespoons applesauce
½ teaspoon baking powder
¾ cup all-purpose flour
1/3 cup melted vegan chocolate
½ cup sprinkles
Directions:
1. Line a cookie sheet with parchment paper or spray with cooking spray.
2. In a bowl melt your chocolate. Place in the freezer to harden for 30 minutes – an hour.
3. While its hardening, melt the butter.
4. Transfer to a larger bowl and add in the coconut sugar, white sugar, and applesauce.
5. Mix well.
6. Add in the baking powder and all-purpose flour.
7. Stir until a dough is formed.
8. Once the 30 minutes- an hour is up, scoop a handful of the dough and press flat.
9. Scoop 1 tablespoon of the chocolate and add to the center of the dough. Cover the whole piece of chocolate with the sides of the dough.
10. Coat in sprinkles.
11. Add to your parchment lined baking tray.
12. Repeat this until all the dough and chocolate is used.
13. Bake for 10-12 minutes at 350 degrees Fahrenheit.
