Halloween Sugar Cookie Bars

Easy + Quick Festive Halloween Recipe

I love making festive sugar cookie bars based on the different holidays. These Halloween ones are so simple to make and come together quickly.

I added Oreos and chocolate chips to my batter, however, you can leave as is. The most important part is the sprinkles.

I used normal vanilla frosting in this recipe but if you wanted to be even more festive you could use orange or black colored frosting for Halloween.

I love how the outside of these are slightly crunchy, but the inside is super chewy.

If you’re planning on having any time of Halloween party, I highly recommend including these in them!

Sugar: any granulated sugar will work. Be sure it is granulated and not a liquid sweetener such as maple syrup.

Vegan butter: any vegan butter will work. You can also substitute for oil. If you aren’t vegan normal butter works too.

Nondairy milk: I used unsweetened almond milk. Any nondairy milk will work. If you aren’t vegan normal milk works too.

Vanilla extract: if you don’t have this you can omit. Almond extract can also be used.

All-purpose flour: I haven’t tested any other flours. The closest option would be a 1:1 gluten-free flour.

Oreos: any sandwich cookie will work. I just prefer Oreos. You could also use the Halloween ones to be even more festive.

Chocolate chips: any chocolate will work. You can use white chocolate, milk chocolate (if not vegan), etc.

Frosting: any frosting will work. I used a store-bought frosting to make the recipe even quicker + easier!

Sprinkles: any Halloween sprinkles will work. I got mine at Trader Joes.

Ingredients:

  • Sugar

  • Vegan butter

  • Nondairy milk

  • Vanilla extract

  • Baking powder

  • All-purpose flour

  • Oreos

  • Chocolate chips

  • Frosting

  • Halloween sprinkles

Recipe:

  • 2/3 cup sugar

  • 6 tablespoons vegan butter

  • 4 tablespoons nondairy milk

  • 1 teaspoon vanilla extract

  • 2 teaspoons baking powder

  • 1 1/3 cup all-purpose flour

  • ½ cup crushed Oreos

  • 1 cup chocolate chips

Directions:

1.    Preheat the oven to 350 degrees Fahrenheit.

2.    Line a loaf pan with parchment paper or spray with cooking spray.

3.     In a small bowl melt the butter. Transfer to larger bowl and add in the sugar, nondairy milk, and vanilla extract. Stir to combine.

4.    Add in the flour and baking powder. Stir until a dough is formed.

5.    Fold in the crushed Oreos and chocolate chips. Transfer to the loaf pan.

6.    Bake for 20-22 minutes or until a toothpick comes out clean Allow to completely cool before adding frosting and sprinkles.

Be sure to store the cookie bars in the refrigerator or freezer. The cookie bars should last up to 5 days in the refrigerator. You can store in the freezer to last longer. They should last for a month minimum.
