Healthy Chocolate Chip Cookies

Cookies Made with Healthier Ingredients

These cookies might be my new go-to recipe. They are made with only 6 ingredients which are super simple and on the healthier side. I also love that this recipe is a small batch recipe. There are so many times I want to bake cookies but don’t want to end up with dozens of them.

While these cookies are made with healthier ingredients, that doesn’t take away from the delicious taste. They have a super fudgy texture and a crisper outside. If you are a peanut butter chocolate lover, I would recommend substituting the almond butter for peanut butter. They turn out super delicious.

Coconut sugar: I like using coconut sugar to keep this recipe refined sugar free. If you don’t want to use coconut sugar, any other granulated sugar will also work. Liquid sweeteners such as maple syrup will alter the outcome of the recipe.

Almond butter: any nut or seed butter will work. I prefer using almond butter. Be sure your nut butter is on the runnier side rather than chunky.

Applesauce: I always use unsweetened applesauce. I would recommend getting the applesauce with only 1-2 ingredients (apples and water). You could use sweetened applesauce if you prefer. If you don’t have applesauce, mashed banana, pumpkin puree, or oil should work. I haven’t tested any of these with this recipe though.

Almond flour: I love using almond flour in this recipe as it is grain-free and gluten-free. If you are allergic to nuts, I would try oat flour. I haven’t tested any other flours in this recipe.

Chocolate chips: any chocolate will work. You could do a mix of chocolate chips and chunks, really whatever you want. I typically buy all my vegan chocolate chips on Amazon.

Ingredients:

  • Coconut sugar

  • Almond butter

  • Applesauce

  • Baking powder

  • Almond flour

  • Chocolate chips

Recipe:

Makes FIVE cookies (double the recipe for more)

  • ¼ cup coconut sugar

  • 1/3 cup almond butter

  • ¼ cup applesauce

  • ½ teaspoon baking powder

  • ½ cup almond flour

  • ½-1 cup chocolate chips

Directions:

1.    Preheat the oven to 350 degrees Fahrenheit.

2.    Line a cookie sheet with parchment paper or spray with cooking spray.

3.    In a bowl combine the coconut sugar, almond butter, and applesauce. Stir well.

4.    Add in the baking powder and almond flour. Stir until a dough forms. Fold in the chocolate chips.

5.    Use a cookie scoop to scoop the dough on to the tray. Optional: add more chocolate chips on top before baking.

6.    Bake for 10 minutes.

Allow to completely cool before eating. The cookies are still baking as they are sitting on the hot tray. Be sure to store the cookies in the refrigerator in a container or Ziplock bag. They should last up to a week. You could also store them in the freezer.
