Oat Fudge Bars

Fudgy, Oat, Delicious

These oat chocolate bars have slowly become one of my favorite desserts. They are super easy to make and no-bake. What is better than that especially in the summer.

These bars are supposed to be a copy-cat version of the oat fudge bars from Starbucks. While I have never tried the real thing, I heard they were very good and I knew I needed to remake them vegan.

These turned out super delicious so if you love anything chocolatey and fudgy you should definitely try.

Vegan butter: any vegan butter will work. Make sure it is MELTED. You can also substitute for melted oil as well. If you aren’t vegan, traditional butter should also work.

Almond butter: any nut or seed butter will work (cashew, sunflower, tahini, etc.) Be sure it is on the liquidly side and not super chunky.

Maple syrup: you can use agave or date syrup as well. If you aren’t vegan, you can also substitute honey. Be sure to not substitute with a granulated sweeter like coconut sugar as it won’t work the same as a liquid sweetener like agave.

Oats: I used rolled oats. Quick oats should also work. Any brand of oats you prefer will work the same.

Chocolate: you can use any chocolate of your preference. You can also mix different chocolate such as milk and white or dark and white. You can use chocolate chips or chop a bar. Be sure when melting your chocolate, you do it in 30 second increments so you don’t burn it in the microwave.

I have not tested any other flours besides almond flour. If you have a nut allergy, I would recommend oat flour. Otherwise, I would stick with almond flour.

I typically also don’t recommend substituting applesauce. There are substitutions but the flavor never tastes the same. If you do want to substitute it however, mashed banana, pumpkin puree, or oil should all work. I haven’t tested any substitutions.

Ingredients:

  • Vegan butter

  • Almond butter

  • Maple syrup

  • Applesauce

  • Oats

  • Almond flour

  • Chocolate

Recipe:

Base + Crumble:

  • 1/3 cup vegan melted butter

  • 1/3 cup almond butter

  • ¼ cup maple syrup

  • ¼ cup applesauce

  • 2/3 cup oats

  • 1 cup almond flour

    Chocolate layer:

  • ¾ cup melted chocolate

  • 1-2 tablespoons almond butter

Directions:

1.    In a small bowl melt your butter.

2.    Transfer to a larger bowl and add in the almond butter, maple syrup, and applesauce.

3.    Stir to combine.

4.    Add in the almond flour and oats.

5.    Stir until a dough like texture forms.

6.    Add ¾ of the mixture to a 9x5 baking pan. Be sure to press flat. Set aside.

7.    In the microwave or in a pot, melt your chocolate.

8.    Once melted add in the almond butter. Stir well.

9.    Add this on top of the mixture in the baking pan. Be sure to spread evenly.

10. With the remaining dough mixture, crumble on top of the chocolate.

11. Allow to set in the freezer for 2 hours.

Be sure to store this in the freezer in an airtight container. Allow to thaw for about 10-15 minutes before eating.
