No Bake Peppermint Bark Brownies

I’ve been dying to make peppermint bark brownies but didn’t feel like turning on my oven and baking a batch of brownies. So, I decided to make these no bake ones instead. They taste super delicious and require hardly any work.
I love that this recipe also has added protein and is relatively low in sugar. A lot of the sweetness comes from the dates, so it is natural sugar.
Dates: be sure to remove the pits out of your dates. I used medjool dates. Since dates are a big part of this recipe there isn’t really anything you could substitute these with.
Almond butter: you can use any nut or seed butter you want.
Almond flour: I haven’t tested any other flours. However, you could use more protein powder, oat flour, or coconut flour. The measurements will be different. Add slowly and continue to blend until a dough forms.
Protein powder: I used chocolate protein powder in replace of cacao powder. If you don’t want to use protein powder replace it with cacao power to make the brownies chocolate.
Coconut cream: coconut cream is the thick part from a can of coconut cream. You can find this at pretty much any grocery store.
Chocolate: any chocolate will work for this recipe.
Peppermint extract: you can omit this if you don’t want the extract peppermint flavor.
Candy cane: you can top with anything you want, sprinkles, more chocolate, etc.

Dates
Almond butter
Almond flour
Protein powder
Coconut cream
Chocolate
Peppermint extract
Candy canes
Recipe:
1 cup dates
½ cup almond butter
1 cup almond flour
½ cup protein powder
1 cup chocolate
1 cup coconut cream
¼ teaspoon peppermint extract
2-4 tablespoons crushed candy cane
Directions:
1. In a bowl add the dates and cover with boiling water. Set aside.
2. Line a baking pan with parchment paper or spray with cooking spray.
3. After the dates have soaked for about 20-30 minutes drain ¾ of the water.
4. Add the dates and almond butter to a blender. Blend until completely smooth. Add in the almond flour and protein powder. Blend until a dough forms.
5. Transfer the dough to the baking pan and place in the freezer for an hour. After the hour, add the coconut cream. Place back in the freezer for 30 minutes. Melt the chocolate with the peppermint extract and add on top. Sprinkle with the crushed candy cane. Place back in the freezer for 10 minutes to harden.
Be sure to store the brownies in the freezer. The brownies should last up to a few months in the freezer. You can store in the refrigerator; however, the texture is better in my opinion when stored in the freezer.
