3 Ingredient Protein Cookies
Getting in Protein and Eating Cookies in One
I’m always looking for easy and convenient ways to get in more protein. These cookies are not only no-bake, but also only 3 ingredients.
If you want, you can add extra things to the cookies. Really anything can be added to the mixture. Nuts, coconut, sprinkles, etc.
These cookies also have no added sugar and are only sweetened from the dates. If you use no sugar added chocolate, there will be no sugar.
Everything comes together super quickly as all you have to do is mix the ingredients together. When mashing the dates with a fork, if you’d rather add them to a blender, you can do that!
As stated in the directions, you MUST allow the dates to soak in boiling water. If you don’t do this, it will be super hard to mash them, and you will have huge clumps in the cookie.
Dates have become one of my favorite things to bake with and snack on. If you’ve never had a date, they are super sweet and give off somewhat of a caramel taste.
Dates are naturally sweet and have many nutritional benefits. Dates actually contain 50% more potassium than bananas. They are also super high in fiber and aid in digestion.
Dates are super versatile when it comes to baking. They can be used in place of a lot of refined sugars. They also work to make a vegan alternative to caramel.
In this recipe I used medjool dates. Any dates you have will work. Make sure to obviously remove the pit if you buy dates that haven’t had the pit removed already.
The protein powder is also up to you. I personally think a vanilla flavored one tastes the best, but any will work.
TIP: when melting your chocolate add around 2 teaspoons of coconut oil to the bowl. The oil helps to make your chocolate super smooth and easy to work with.
There are countless vegan chocolate brands nowadays. You can use your favorite chocolate in this recipe, doesn’t matter what kind.
Ingredients:
Dates
Protein powder
Chocolate
Water
Recipe:
½ cup dates
2/3 cup protein powder
¼ cup water
1 cup chocolate
Directions:
1. In a bowl add your dates and boiling water.
2. Let them sit for 15 minutes.
3. After the 15 minutes, drain all the water EXCEPT about a tablespoon or two.
4. Mash the dates very well with a fork.
5. Once you have a paste, add in the protein powder.
6. Stir to combine.
7. If the mixture is too dry, slowly add the water you may not need it all.
8. Once you have a dough, form into cookies, and add to a cookie tray.
9. Place in the freezer for 20 minutes.
10.Melt your chocolate.
11.Dip the cookies in the chocolate.
12.Allow the chocolate to harden in the freezer for 20 minutes.
Once hardened enjoy! Make sure to store in the freezer or refrigerator.
