Made with wholesome ingredients and free from dairy, gluten, and refined sugar, these bites are the kind of indulgence you can feel good about. These Raspberry Chocolate Bites may look fancy, but they’re incredibly simple to make. The base consists of just a few key ingredients: dates, nut butter, coconut flour, and cacao powder. The dates provide natural sweetness and stickiness, while the nut butter gives the bites a creamy texture. Coconut flour adds a bit of structure, and the cacao powder brings that rich, chocolaty depth that will make you feel like you're indulging in something decadent.

Dates: I used medjool dates in this recipe. I would recommend soaking your dates in boiling water for at least 30 minutes. This helps the dates to blend a lot easier and overall makes the bites have a better texture.
Chocolate chips: any chocolate chips will work.
Nondairy milk: I used unsweetened almond milk. Any nondairy milk will work. If you aren’t vegan normal milk works too.
Almond butter: I prefer using almond butter in this recipe, however, any nut or seed butter will work.
Raspberries: you can use fresh or frozen. You can also substitute the raspberries for any fruit you like.
Cacao powder: I like using cacao powder for the extra nutrients. Cocoa powder will also work.
Coconut flour: I haven’t tested any other flours in this recipe. If you are looking to substitute the coconut flour, you could use almond flour or protein powder. You will most likely need more of each as coconut flour is very absorbent.

Nondairy milk
Vanilla extract

Recipe:
SMALL BATCH RECIPE
Base:
10 dates (about 1 cup)
3 tablespoons nondairy milk
1 teaspoon vanilla extract
3 tablespoons almond butter
1/4 cup cacao powder
1/4 cup PLUS 2 tablespoons coconut flour
Filling:
1/2 cup raspberries (fresh or frozen)
Topping:
1 cup chocolate chips
Optional: flakey salt
Directions:
Line whatever baking dish you plan on using (I used a loaf pan) with parchment paper or spray with cooking spray. Set aside.
To the blender, add the dates, nondairy milk, vanilla, and almond butter. Blend until smooth. Add in the cacao powder and coconut flour. Blend until you have a thick dough like texture.
Transfer this to the baking pan and press down. Be sure to spread out evenly.
Add your raspberries to a bowl. If they are frozen allow them to thaw out or microwave them for 30 seconds. Use a fork to mash the raspberries. Add the mashed raspberries on top of the date mixture.
Place this in the freezer for at least an hour. After the hour, slice into bite sized pieces.
Melt the chocolate and coat each bite in chocolate. Optional: add salt on top. Allow the chocolate to harden before eating.
I recommend storing these in the freezer so that all the layers stay in tact. However, you can store them in the refrigerator. They should last up to one week. Be sure to store in an airtight container.
