Peanut Butter Chocolate Protein Rice Krispy Treats

Rice Krispy treats were always a favorite of mine growing up. We would always have the variety packs in my house. While this isn’t exactly a traditional Rice Krispy recipe, it still tastes super delicious while also containing some extra protein.
Also, if you are vegan, you can enjoy these! These are also gluten-free depending on what cereal you use. As well as nut-free if you use a seed butter. I love that these are school safe for younger kids.
I added protein into this recipe so it could be more of a snack rather than a dessert. These are perfect for on-the-go and are super easy to prep a big batch.
Whether you use nut or seed butter be sure you are using a natural kind. For example, if you are using peanut butter, the only ingredient should be peanut and maybe salt. The natural ones work a lot better as they are typically runnier. The processed ones are a lot thicker, so they don’t work as well in this recipe.
Peanut butter: any nut or seed butter will work (almond, cashew, sunflower, etc.)
Marshmallows: I used jumbo marshmallows. Be sure to change the measurement if you use normal sized marshmallow. Also, if you are vegan be sure to check the ingredients as most marshmallows contain gelatin. I find vegan ones at Trader Joes or Whole Foods.
Protein powder: I used a plant-based vanilla kind. Another protein will work. I wouldn’t recommend a really overpowering flavor though.
Cereal: I used a cornflake-based cereal. Any cereal will work.
Vegan butter: any vegan butter will work. If you aren’t vegan traditional butter should also work.
Chocolate: any chocolate will work. You can use chocolate chips or chop a chocolate bar. You could also leave these without the chocolate they still taste delicious.
Ingredients:
Peanut butter
Marshmallows
Protein powder
Cereal
Chocolate
Vegan butter
Recipe:
1/3 cup natural peanut butter
1 cup jumbo marshmallows (or about ½ cup normal sized)
1 tablespoon vegan butter
¼ cup protein powder (I used vanilla)
1 cup cereal
1 cup chocolate
Directions:
1. Line a baking pan with parchment paper or spray with cooking spray.
2. In a large bowl add your marshmallows and vegan butter.
3. Microwave for 30 seconds or until melted. You could also do this on the stove.
4. Once the marshmallows are melted, add in your peanut butter, and combine well.
5. Add in the protein powder and cereal and stir until everything is combined.
6. Transfer to baking pan.
7. Melt your chocolate and add on top.
8. Allow to harden in the freezer for about 30 minutes.
You can store these in the refrigerator or freezer. I prefer the freezer and just allow them to thaw for about 5 minutes before eating!
