Strawberry Sugar Cookies
Small Batch Summery Cookies
This is the perfect summer cookie recipe; it is super light and refreshing. Also, I find strawberries taste the absolute best in the summer. Keep in mind this is a small batch recipe so, it only makes two cookies. I find this perfect for summer when I’m craving a cookie but don’t want to make a whole batch.
Also, it makes the process super quick. From start to finish, these cookies can be ready in less than 15 minutes. Everything is also made in one bowl which makes for super easy clean up. You also only need a tablespoon and teaspoon for measurements.
I have tried tons of other fruit variations with this recipe, and they all turn out amazing! I have a few more on my blog. I have a banana cream, blueberry muffin, and orange. I would love to hear any variations you try!
Vegan butter: any vegan butter will work. You could also use liquid oil. If you aren’t vegan, you can use traditional butter as well. Be sure the butter is melted.
Applesauce: I always use unsweetened applesauce. You could use sweetened, but I find the unsweetened works better. As always, I don’t recommend substituting the applesauce, however, mashed banana should work.
Sugar: you can use any granulated sweetener of your choice. I used white sugar to keep the color white rather than turn it darker with coconut sugar. I haven’t tried any liquid sweeteners in this recipe such as maple syrup.
Almond flour: I like to use almond flour to keep the recipe grain and gluten free. I haven’t tested any other flours in this recipe.
Strawberries: you can use fresh or frozen strawberries. I used fresh strawberries. You could also add in whatever fruit you want. This recipe works as a base for just about any add-ins.
Optional: frosting: I used store-bought vanilla frosting. Any frosting will work.

Vegan butter
Applesauce
Sugar
Baking powder
Almond flour

Recipe:
Makes TWO large cookies
1 tablespoon vegan butter
2 tablespoons sugar
1 tablespoon applesauce
½ teaspoon baking powder
11 tablespoons almond flour
3-4 tablespoons chopped strawberries
Directions:
1. Preheat your oven to 350 degrees Fahrenheit. Line a cookie sheet with parchment paper or spray with cooking spray.
2. In a bowl melt the butter. Add in the sugar and applesauce. Stir well to combine.
3. Add in the baking powder and almond flour. Stir well until a dough forms. Fold in the chopped strawberries. Scoop the dough and transfer to the baking sheet. Bake for 8-9 minutes.
4. Allow to completely cool and if desired, top with frosting plus extra strawberries.
If you aren’t consuming right away, be sure to store the cookies in the refrigerator. They should last up to a week in the refrigerator. You can store them in the freezer to last longer.
