Peanut Butter + Chocolate Deliciousness All Packed Into This Vegan Cookie

When I think of my childhood favorite treats, Girl Scout cookies are at the top of the list.

For those who love Girl Scout cookies but can no longer eat them, these are for you! They are gluten-free and completely vegan. If you have a peanut allergy, you can substitute the peanut butter for any nut or seed butter.

These cookies are really perfect for just about anyone. These vegan tagalongs and my take on them came out so good. Everyone that has tasted them has told me they taste just like the original. The recipe is super simple and only requires six ingredients.

My favorite part is everything is just mixed in one bowl so it’s a super easy clean up. The cookies are also grain-free and refined sugar-free.

When melting the chocolate for the cookies I would recommend adding a teaspoon or two of coconut oil. This makes the chocolate super runny and makes the whole process a lot smoother.

I would also recommend once you are done dipping the cookies in chocolate to place them on parchment paper. This makes it super easy to remove them once the chocolate has hardened. I hope you guys love this recipe as much as I do.

Ingredients

  • Almond flour

  • Baking powder

  • Maple syrup

  • Applesauce

  • Peanut butter

  • Vegan chocolate

Recipe

  • 2 cups almond flour

  • ½ teaspoon baking powder

  • ¼ cup maple syrup

  • ¼ cup applesauce

  • ¼ cup peanut butter

  • 1 cup vegan chocolate

Directions

Makes 12 cookies:

  1. Start by preheating your oven to 350 degrees Fahrenheit.

  2. Line a cookie sheet with parchment paper or spray with cooking oil.

  3. In a mixing bowl combine the applesauce and maple syrup.

  4. Add in the almond flour and baking powder.

  5. Stir until a dough forms.

  6. Take a tablespoon and scoop out the dough.

  7. Roll the dough into a ball and press flat on the cookie sheet.

  8. Bake for 7 minutes.

  9. Let cool for 25-30 minutes.

  10. Once cooled add a layer of peanut butter to each cookie.

  11. Place in the freezer for 40-45 minutes.

  12. Right before taking them out, start melting your chocolate.

  13. Dip each cookie into the chocolate.

  14. Place back in the freezer to allow the chocolate to harden.

  15. Once the chocolate is hardened, they are ready to be eaten

Make sure to store the cookies in an airtight container in the refrigerator or freezer. Trust me if you are a lover of chocolate and peanut butter you will love these. Might be better than the original.
