Vegan Strawberry Shortcake Bites
The Best No Bake Recipe Bursting With Strawberry Goodness
As a kid, anything strawberry shortcake caught my attention. I was obsessed with the strawberry shortcake ice cream bars as a kid. When Valentine’s Day came around, I had the idea to make vegan strawberry shortcake bites.
They turned out so good. This recipe is grain-free and gluten-free. Everything comes together in one bowl so it’s not a lot to clean up either.
They are the perfect treat to pack on the go. I love having a stash of these in my freezer for nights when I’m craving something sweet. Not only are these a delicious treat but also can be a snack, pre workout, literally anything.
I tend to find it hard to find vegan white chocolate sometimes. For the one I used in this recipe I found it on Amazon. There are a few options of vegan white chocolate on Amazon. Also, in Whole Foods I have seen the brand Evolved Chocolate.
If you aren’t a fan of white chocolate, you can skip on that part and just eat these as is. You could also add normal chocolate because who doesn’t love strawberries and chocolate?! I hope you guys love this recipe as much as I do.
Ingredients
Applesauce
Maple syrup
Coconut flour
Vanilla
Strawberries
White chocolate
Recipe
¼ cup applesauce
¼ cup maple syrup
¾ cup coconut flour
1 teaspoon vanilla
2-3 large frozen strawberries
1 cup vegan white chocolate
Directions
In a bowl add the applesauce, maple syrup, and vanilla.
Stir until combined.
Add in the coconut flour.
Stir until combined.
Add your strawberries to a separate bowl and microwave for 30 seconds to 1 minute.
Once they are softened, mash with a fork.
Add to the mixing bowl and mix.
Once mixed, scoop into bite sizes.
Once you have scooped all your dough, let it sit in the freezer for 40 minutes to an hour.
Right before you take them out of the freezer start to melt your chocolate.
Dip each bite into the melted chocolate.
Once they are all dipped add them back to the freezer to allow the chocolate to harden.
Once the chocolate has hardened, they are ready to eat
Make sure to store in an airtight container in the freezer or refrigerator.
Optional: I like to add sprinkles to mine. You could also crush up a graham cracker and add that on top before the chocolate hardens. Get creative with this! It's one of my favorite recipes.
