Layers Of Chocolate Almond Butter Goodness
I am a huge fan of no-bake recipes, and this recipe did not disappoint. Some of my all-time favorite foods include chocolate and almond butter. For this recipe I had to combine them.
The base is a buttery and delicious crust that brings the whole recipe together. Not only is this recipe no-bake, but also only six ingredients. I know for a fact these will be on repeat all summer long.
These were a huge hit in my family. They were completely gone within a day of making them. These bars remind me a little of a candy bar but with their own twist.
This recipe can be customizable. You could add in any extras to the crust, middle, or top. Next time I make this recipe I am planning to either add sprinkles or Oreos to the chocolate. Adding fruit would also be super yummy as well.
I used monk fruit as the sugar for this recipe. White, brown, coconut, or any granulated sugar will work. The same goes for the powdered sugar. You can use traditional powdered sugar or an alternative like monk fruit based powdered sugar. I did a mixture of both.
For the vegan butter, I always use Earth Balance. I have found it to be the best vegan butter to bake with.
I personally prefer almond butter over peanut butter so that is why I used it in this recipe. If you are a huge peanut butter lover or any other nut or seed butter lover, you can substitute that.
TIP: when melting your chocolate add around ½ a tablespoon of coconut oil. This makes the chocolate become super easy to work with and there will be no clumps.
Ingredients:
Almond flour
Sugar
Vegan Butter
Almond Butter
Powdered sugar
Vegan Chocolate
Recipe:
Base:
½ cup almond flour
3 tablespoons sugar of choice
3 tablespoons melted butter
Middle:
½ cup almond butter
1/3 cup powdered sugar
Top:
1 ½ cup melted chocolate chips
Directions:
1. Line a 9x5 baking pan with parchment paper or spray with cooking oil.
2. In a medium bowl, melt the butter.
3. Once melted add the almond flour and sugar.
4. Stir to combine.
5. Once a crust like texture has formed, press into the baking pan.
6. Place in the refrigerator.
7. In a medium bowl combine the almond butter and powdered sugar.
8. Stir until combined.
9. Place on top of the crust layer.
10. Place back in the refrigerator for 30 minutes.
11. After the 30 minutes, melt your chocolate.
12. Add the melted chocolate on top.
13. Place in the refrigerator or freezer to allow chocolate to harden.
14. Once hardened its ready to be enjoyed!
I prefer to store mine in the freezer. You can also do the refrigerator, just make sure it’s one of the two options. Please let me know your thoughts if you try this recipe! If you add anything to it, such as fruit or Oreos let me know!
