Small Batch Cinnamon Roll Cookies

Fluffy Cinnamon Cookie With Creamy Frosting

Those moments when you are craving a cookie but don’t feel like spending the time or creating the mess of making a whole batch. This recipe is for you. These small batch cinnamon roll cookies make only two large cookies and are SO good. 

Made all in one bowl with hardly any measuring spoons or cups. I find myself craving cookies all the time but the thought of the mess and dishes after is the worst. I knew I had to create these to help not only myself but so many others who hate doing the dishes and cleaning the mess up after baking. 

This recipe has definitely become a favorite in my family! The texture is super fluffy and combined with the creamy frosting it’s an unbeatable combination. I love this recipe especially because it’s so versatile. 

You can swap the cinnamon for chocolate chips, Oreos, sprinkles, literally whatever and you have a small batch of cookies.

This recipe calls for vegan butter. Any brand will work. I personally use Earth Balance. This is the brand I prefer for all types of baking. 

For the sugar- I used monk fruit. Any granulated sugar will work (coconut, white, brown, etc.) I have found that using monk fruit sugar tastes the best in this recipe. If you do plan on using a different sugar, make sure it is GRANLUATED and not liquid (maple syrup or agave) this will change the whole outcome of the recipe. 

Any frosting recipe at all will work for this. Personally, I went the lazy way and used a store-bought one. Most store-bought frostings are vegan, just make sure to check the label! If you are looking for a slightly “healthier” store-bought frosting I would recommend Simple Mills

 Ingredients:

  • Vegan Butter

  • Sugar of choice

  • Applesauce

  • Baking powder

  • Cinnamon

  • Almond flour

  • Frosting

Recipe:

Makes two large cookies

  • 1 tablespoon melted vegan butter

  • 2 tablespoons of sugar (I used monk fruit)

  • 1 tablespoon applesauce

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon - 1 teaspoon of cinnamon

  • 11 tablespoons of almond flour

Directions:

1.  Preheat your oven to 350 degrees Fahrenheit.

2.  Line a cookie sheet with parchment paper or spray with cooking spray.

3.  In a bowl add the butter and microwave for 30 seconds.

4.  Once melted, add the sugar and applesauce.

5.  Stir until combined.

6.  Add the baking powder, cinnamon, and almond flour.

7.  Stir until the dough forms.

8. Scoop half the dough and add to the tray.

9.  Form into a ball and press flat.

10. Do the same with the other half.

11.  Bake at 350 degrees Fahrenheit for 7-10 minutes, make sure to watch them as they bake quickly.

12. Let completely cool then add the frosting.
