Fluffy Sugar Cookie With Pieces Of Oreo, Topped With Frosting

Oreos have slowly become my favorite cookie ever. Any chance I get to add it to a recipe I have to. These Oreo sugar cookies might be one of my all-time favorite recipes I’ve made.

The base is a sugar cookie recipe I always use. It is so simple and takes hardly any time to make. You also don’t have to worry about letting the dough chill, so you get to eat the cookies quicker! 

On top of the recipe containing very few ingredients, the cookies take a maximum of 13 minutes to bake. These are perfect for when you need a quick dessert and don’t want to put a lot of time and effort into it. I promise these cookies will impress anyone. 

I always get a ton of questions about substituting the almond flour in this recipe. I have not tested any other flours with this recipe. I also wouldn’t recommend changing the flour. The almond flour in this recipe creates a really fluffy texture.

Maple syrup: you can use agave or date syrup. If you use date syrup, keep in mind it will change the color of the cookies.

Applesauce: I wouldn’t recommend substituting. However, mashed banana, mashed sweet potato, pumpkin, or oil could work.

For the frosting, I typically go the lazy way and buy a store-bought one. Your frosting choice is completely up to you! There are plenty of vegan frosting recipes online. Simple Mills is always a good option.

For the recipe I stated 7-10 crushed Oreos. Obviously, this just depends on your preference. That is the amount I did. You can do more or less; it won’t affect the outcome of the recipe.

When crushing the Oreos, my favorite way to do so is to add all the Oreos to a Ziplock bag. You can then take a rolling pin or even a measuring cup and just smash them until they are all crumbled. For this recipe the Oreos just need to be slightly crushed, they don’t need to be completely crushed to a fine texture. 

 Ingredients:

  • Almond flour

  • Baking powder

  • Maple syrup

  • Applesauce

  • Oreos 

  • Frosting 

Recipe:

  • 2 cups almond flour

  • ½ teaspoon baking powder

  • ¼ cup maple syrup

  • ¼ cup applesauce

  • 7-10 crushed Oreos (you can do more or less)

Directions:

1.    Start by preheating your oven to 350 degrees Fahrenheit.

2.    Line a cookie sheet with parchment paper or cooking spray.

3.    In a medium bowl add almond flour and baking powder.

4.    Stir to combine.

5.    Add in the maple syrup and applesauce.

6.    Stir again.

7.    Once the dough has formed, fold in the crushed Oreos.

8.    Using a cookie scoop, scoop each cookie onto the tray.

9.    Make sure to press them flat.

10. Bake for 11-13 minutes.

Once completely cooled add the frosting. This is optional but I also added more crushed Oreos on top! My favorite way to eat these cookies if after chilling them in the refrigerator. The combination of the frosting and cookie chilled tastes so good!
