Banana Chocolate Pumpkin Bites

No-Bake Fall Dessert

I had made a different variation of these banana bites during the summer. Now that its fall I had to put a fall twist on these. This recipe is beyond easy but always tastes so delicious!

I love having these in my freezer for the week. They make a delicious snack or dessert. I purposely add protein to mine to stabilize my blood sugar so it’s not just strictly sugar. If you use no sugar added chocolate, this recipe is very low in sugar.

Be sure your bananas are ripe. A lot of the sweetness comes from the banana, so an underripe banana won’t taste as good.

For the basic recipe, it is just a slice of banana, pumpkin puree, and another slice of banana, then coated in chocolate. Keep in mind if you are just doing this, it won’t be as sweet as if you added sugar. Personally, the sweetness from the chocolate and banana is sweet enough for me! However, if you want to add things to the inside, I left some suggestions. 

You can really add whatever you want to the pumpkin puree. If you don’t want to add maple syrup, you can add normal sugar, agave, etc. I like adding the protein powder for the taste as well as just keeping in more protein to help keep me full.

Some of my favorite filling combinations:

Pumpkin, vanilla protein powder, cinnamon, and maple syrup

Pumpkin, cinnamon protein powder, crushed cashews

The basic bites coated in white chocolate instead of normal chocolate

The basic bites adding crushed nuts to the chocolate

A layer of pumpkin, then a layer of nut butter

TIP: when melting your chocolate add in ½-1 teaspoon of coconut oil. It helps the chocolate get super smooth and makes it a lot easier to coat the bananas in.

Ingredients:

  • Banana

  • Pumpkin puree

  • Chocolate

  • Optional: maple syrup, protein powder, cinnamon

Recipe:

  • 1 banana (you can do however many you want depending how many bites you want)

  • 1/3 cup pumpkin puree

  • 1 cup chocolate

  • 1 teaspoon cinnamon (optional)

  • 4 tablespoons protein powder (optional)

  • 3 tablespoons maple syrup (optional)

Directions:

1.    Slice your banana into a coin shape. Set aside.

2.    If you are adding the protein powder, maple syrup, or cinnamon, combine those with the pumpkin puree.

3.    Add 1 teaspoon of the mixture to HALF the banana pieces. Add a slice of banana on top.

4.    Place in the freezer for an hour.

5.    After the hour, melt the chocolate and coat each bite in chocolate. Place back in the freezer to harden.

Be sure to store these in the freezer. They should last for a month minimum.
