The Perfect Spring Recipe Bursting with Flavor

It may be an unpopular opinion, however, carrot cake will forever be one of my all-time favorite cake recipes. The texture is so fluffy, and the cake is bursting with flavor from the spice blend. My favorite part of carrot cake may have to be the frosting though.

If you aren’t the biggest fan of carrot cake, I highly recommend trying this recipe. It may just change your mind. Especially, considering how quick and easy this it to make.

Since this is a vegan recipe, I use flax eggs instead of traditional eggs.

How to make a flax egg:

For one egg the ratio is 1 tablespoon of flax seed meal to 3 tablespoons of water. For two, just double that. All you have to do is combine the ingredients, give it a quick mix, and allow it to set. After 5-10 minutes it will have formed into an egg-like texture.

In the ingredients list, I added a spice blend. Most carrot cakes have some sort of spice added whether its cinnamon, ginger, cloves, etc. You can either not add any spice at all or decide based on your preference which to do. I personally added cinnamon and ginger. Either way, I recommend about 1 teaspoon to 1 ½ teaspoons of spice.

This carrot cake uses a mix of almond flour and all-purpose flour. This mixture gives the cake a very fluffy texture. I haven’t tested any other flours for this cake and wouldn’t recommend switching the flours.

A lot of traditional carrot cakes have either nuts or raisins added. I personally added chopped walnuts on top. You can add whatever nut you prefer on top and to the batter.

I always get countless questions about the frosting I use. Typically, I go the lazy way and don’t make frosting homemade. Almost all store’s bought frostings are vegan. Just make sure to always check the label.

If you want a homemade frosting, there are tons of vegan frosting options online! 

 Ingredients:

  • Flax eggs

  • Maple syrup

  • Coconut sugar

  • Almond butter

  • Almond milk

  • Applesauce

  • Baking powder

  • Spice blend

  • Almond flour 

  • All-purpose flour

  • Grated carrots

  • Optional: frosting & walnuts

Recipe:

  • 2 flax eggs

  • ¼ cup coconut sugar

  • ¼ cup maple syrup

  • ¼ cup almond butter

  • 1/3 cup almond milk

  • 1/3 cup applesauce

  • 2 teaspoons baking powder

  • 1 ½ teaspoon spice blend 

  • ½ cup almond flour

  • ½ cup all-purpose flour

  • 1/3c-1/2c grated carrots

Directions:

1.    Preheat your oven to 350 degrees Fahrenheit.

2.    Line a 9x5 baking pan with parchment paper or cooking spray.

3.    In a bowl combine the flax seed meal and water.

4.    Set aside.

5.    In a medium bowl add the coconut sugar, maple syrup, almond butter, almond milk, and applesauce.

6.    Stir well.

7.    Add in the flax eggs.

8.    Add in the spice blend, baking powder, almond flour, and all-purpose flour.

9.    Stir well.

10.Fold in the carrots.

11. Add to baking pan.

12. Bake for 30-35 minutes.

13. Once cooled add the frosting and chopped nuts.

Store in an airtight container in the refrigerator!
