Chocolate Covered Apple Spice Bites

No-Bake Apple Chocolate Bites

Apple season is my favorite season. There is nothing better than a juicy and crispy honey crisp apple. The next best thing is creating a dessert with it. Especially, combining apples and chocolate. 

These bites are no-bake, so they take hardly any time to make. They are also refined-sugar-free depending on which chocolate you use. They can easily be made allergy friendly as well.

I always prep a big batch of these and store them in the freezer for the week. They have the perfect amount of sweetness without being too overpowering. The nut butter in these helps to not cause a huge spike in blood sugar and adds great healthy fats.

I like making these into bites. However, you could add the dough mixture to a baking pan and add chocolate on top to create bars. You could also add the dough to cupcake liners then add the chocolate on top to be like Reese’s. The options are really endless!

I also love adding raisins to mine. You could add whatever you want! I add walnuts sometimes as well.

Coconut sugar: you can use any granulated sugar you prefer (white, stevia, monk fruit, etc.)

Almond butter: any nut or seed butter will work. I’d recommend one that isn’t super overpowering such as cashew butter or sunflower seed butter.

Applesauce: I used unsweetened applesauce. If you don’t want to use this, you can use pumpkin puree instead.

Cinnamon: you could also use pumpkin pie spice or any spice of your choice.

Almond flour: you can replace the almond flour with any flour of your choice. The measurements WILL BE DIFFERENT so add slowly until a dough forms. You could also use protein powder.

Chocolate: any chocolate will work. White chocolate also tastes delicious with these!

Ingredients:

  • Coconut sugar

  • Almond butter

  • Applesauce

  • Cinnamon

  • Almond flour

  • Chopped apple

  • Chocolate

Recipe:

  • 1/3 cup coconut sugar

  • ½ cup almond butter

  • ¼ cup applesauce

  • 1-2 teaspoons cinnamon

  • 1 cup almond flour

  • ½ chopped apple

  • 1 cup chocolate

Directions:

1.    Start by chopping the apple, then set aside.

2.    In a bowl add the coconut sugar, almond butter, and applesauce. Stir well.

3.    Add in the cinnamon and almond flour. Stir again until a dough forms.

4.    Fold in the chopped apple.

5.    Using a cookie scoop or spoon scoop out the dough and roll into balls. Repeat with all the dough.

6.    Place in the refrigerator for 20 minutes.

7.    After the 20 minutes, melt your chocolate and dip each bite into the chocolate.

8.    Place back in the refrigerator until the chocolate is hardened.

Be sure to store these in the refrigerator or freezer. The bites should last up to 5 days in the refrigerator. You can prep a large batch and store in the freezer. They should last for a month minimum.
