Chocolate Covered Strawberry Protein Bars

Easy + High Protein Snack

I always forget how delicious the combination of chocolate and strawberries is until Valentine’s Day comes around and I am reminded. If you love anything chocolate + strawberries these protein bars are for you.

I have loved starting to make my own protein bars from home as it is cheaper, and the ingredients are usually a lot healthier. You can use the base of these bars and change up the add-ins to create different flavors each time.

Applesauce: I always use unsweetened applesauce. Ideally, you want the only ingredients to be water and apples. You can use sweetened applesauce; however, I find it to be sweet enough using unsweetened applesauce.

Nondairy milk: I always use unsweetened almond milk. Any nondairy milk will work. If you aren’t vegan, traditional milk should also work.

Sugar: I like to use coconut sugar as it is refined sugar free. Any granulated sugar will work such as monk fruit or white sugar.

Banana: be sure the banana is ripe as it a source of sweetness in this recipe. If you don’t want to use banana you could replace with about ¼ cup of applesauce or nondairy yogurt.

Protein powder: I used vanilla plant-based protein powder. Any flavor will work. I haven’t tested any whey-based protein.

Almond flour: I haven’t tested any other flours in this recipe. You could replace the almond flour with more protein powder or more coconut flour. However, the measurements will be different, so I recommended adding slowly and stirring as you go. Once a dough like texture is formed you are good to go.

Strawberries: I used fresh strawberries in this. Frozen ones won’t work as they will melt and make the bars soggy. You could use any fruit you want.

Chocolate chips: any chocolate will work.

Ingredients

  • Applesauce

  • Nondairy milk

  • Sugar

  • Banana

  • Protein powder

  • Almond flour

  • Coconut flour

  • Strawberries

  • Chocolate chips

Recipe:

  • ½ cup applesauce

  • ¼ cup nondairy milk

  • 1/3 cup sugar

  • 1 medium banana

  • ¼ cup protein powder

  • 2 cups almond flour

  • 1/3 cup coconut flour

  • 1/3 cup chopped strawberries

  • 1 cup chocolate chips

Directions:

1.    Line a 9x5 loaf pan with parchment paper or spray with cooking spray. Set aside.

2.    In a large bowl mash the banana. Add in the applesauce, nondairy milk, and sugar. Stir to combine.

3.    Add in the protein powder, almond flour, and coconut flour. Stir until a dough is formed. Fold in the chopped strawberries (I recommend coating them in coconut flour before adding in the dough to ensure they don’t get soggy).

4.    Transfer to mixture to baking pan and place in the refrigerator for 1 hour. After the hour, cut into squares or whatever shape you want. Melt the chocolate and coat each square in it. optional: add sliced strawberry on top.

 Store the bars in an airtight container in the refrigerator, they should last up to 1 week. You can store them in the freezer to last longer.
