Fluffy, Dairy Free Donuts

Ever since I was a kid, I remember my favorite ice cream flavor was always cookies and cream because of the huge chunks of Oreos. I had a ton of Oreos in my house and decided I should try and make cookies and cream donuts. They turned out better than I imagined. The donuts are super fluffy, not overly sweet, and really satisfied my craving for cookies and cream.

If you are an Oreo lover like me, you have to try this recipe.

Vegan butter: you can use any vegan butter of your preference. Be sure it is melted. You could also use liquid oil instead; however, I find the butter makes for a better outcome. If you aren’t vegan, you can use traditional butter.

Sugar: I always switch up which sugar I use in this recipe. Typically, it is either coconut sugar or white sugar. Be sure you are using a granulated sweetener as I haven’t tested any liquid sweeteners in this recipe.

Applesauce: I always use unsweetened applesauce. Ideally, you want the ingredients to just be apples and water. You can use sweetened applesauce; however, I find the recipe is already sweet enough from the sugar, chocolate, and Oreos. If you are looking to substitute the applesauce you can try mashed banana. This will give off a banana flavor though, keep that in mind!

Nondairy milk: I use unsweetened almond milk. Any nondairy milk will work. If you aren’t vegan traditional milk works as well.

All-purpose flour: I haven’t tested any other flours in this recipe. I find the all-purpose flour and almond flour work super well together to create a super fluffy texture.

Oreos: I use traditional Oreos in this recipe. You can replace the Oreos with your cookie of choice if you’d like.

Chocolate chips: any chocolate chips will work. You could also chop a chocolate bar.

Ingredients:

  • Vegan butter

  • Sugar

  • Applesauce

  • Nondairy milk

  • Baking powder

  • All-purpose flour

  • Almond flour

  • Oreos

  • Chocolate chips

Recipe:

  • 3 tablespoons vegan butter

  • 1/3 cup sugar

  • 1/3 cup applesauce

  • ¼ cup nondairy milk

  • 2 teaspoons baking powder

  • 2/3 cup all-purpose flour

  • ¼ cup almond flour

  • ½ cup Oreos

  • ½ cup chocolate chips

Directions:

1.    Preheat the oven to 350 degrees Fahrenheit. Spray a donut pan with cooking spray. Set aside.

2.    In a bowl, melt the butter. Add in the sugar, applesauce, and nondairy milk. Stir to combine.

3.    Add in the baking powder, all-purpose flour, and almond flour. Stir until a batter is formed. Fold in the Oreos and chocolate chips.

4.    Transfer to donut pan. Bake for 20-22 minutes.

5.    Optional: once completely cooled coat in powdered sugar or top with frosting of choice.

Be sure to store the donuts in an airtight container in the refrigerator. They should last up to 1 week. You could also store in the freezer to have them last longer. Feel free to reach out with any questions.
