Easy High Protein Snack

I am always looking for new easy ways to get more protein into my diet. This cookie dough is the perfect option. Everything is thrown into the blender and ready within 5 minutes. I love how you can really customize this to whatever flavor you want. You can switch up the protein powder flavor, add-ins, and yogurt flavor.

I make this cookie dough at least once a week. It really makes the perfect snack that will actually keep you full. The protein from the chickpeas and protein powder plus the healthy fats from the almond butter all work to make the perfect snack.

Chickpeas: I love using chickpeas in this recipe as it adds tons of protein and fiber. You can’t taste the chickpeas at all. You can substitute the chickpeas for basically any other type of bean. Besides substituting with another bean, there isn’t really anything else you could substitute with as it’s the base of the recipe.

Almond butter: I like using almond butter in this recipe. You can use any nut or seed butter of your choice, for example, peanut or sunflower seed butter. Be sure your nut or seed butter is on the runnier side rather than chunky.

Coconut sugar: I like using coconut sugar to keep the recipe refined sugar free. Any granulated sugar of your choice will work, for example, stevia or monk fruit. I haven’t tried this recipe with any liquid sweetener such as maple syrup.

Vegan yogurt: I used an unsweetened cashew milk-based yogurt. Any yogurt of your choice will work. You could replace the yogurt with applesauce as well.

Protein powder: I used a plant-based unflavored protein powder in this recipe. You can use any flavor of protein powder you want. I would recommend sticking to a subtle flavored one.

Oats: I used rolled oats in this recipe. You could replace the oats with coconut or almond flour. Be sure to add slowly and blend as you go if you are doing this as the measurements will be different.

Sprinkles: any sprinkles will work. If you don’t want to add sprinkles you can leave as is or add in anything you want such as chocolate chips, Oreos, nuts, etc.

Ingredients:

  • Chickpeas

  • Almond butter

  • Coconut sugar

  • Vegan yogurt

  • Protein powder

  • Oats

  • Sprinkles

Recipe:

  • ½ cup chickpeas

  • 1/3 cup almond butter

  • 1/3 cup coconut sugar

  • ½ cup vegan yogurt

  • ¼ cup protein powder

  • ¾ cup oats

  • 1/3 cup sprinkles

Directions:

1.    To a blender or food processor, add in the chickpeas, almond butter, coconut sugar, and vegan yogurt. Blend until well combined.

2.    Add in the protein powder and oats. Blend again until a dough is formed and there are no chunks.

3.    Using a rubber spatula, fold in the sprinkles. Transfer to whatever dish you want and let chill in the refrigerator for 1-2 hours.

Be sure to store the cookie dough in the refrigerator and that it is covered with either a lid, tin foil, or plastic wrap. The cookie dough should last up to 1 week. You can also store it in the freezer to last longer.
