S’mores Protein Bites

Quick + Delicious Summer Snack

Anything s’mores screams summer to me. I had a ton of leftover marshmallows and wanted to make a filling snack with them. This is where the creation of these bites came from.

These bites are super easy to make and the perfect thing to prep at the beginning of the week. They give you all those s’mores’ flavors while being a little bit healthier and more filling from the protein powder.

Vegan butter: any vegan butter will work. Be sure it is melted. If you don’t want to use butter, you can also use liquid oil. If you aren’t vegan, you can use traditional butter.

Sugar: I like to use coconut sugar as it is refined sugar free. Any granulated sugar will work in this recipe. I haven’t tested liquid sweetener in this recipe.

Nondairy milk: I used unsweetened almond milk in this recipe. Any nondairy milk will work. If you aren’t vegan, traditional milk works as well.

Protein powder: I used plant-based vanilla protein. Any flavor will work. I would recommend a simple flavor like vanilla or chocolate. I haven’t tested whey-based protein in this recipe. If you don’t want to add the protein powder, you could add more almond flour or coconut flour. These measurements WILL BE different so be sure to add slowly.

Almond flour: I like to use almond flour in this recipe as I find it gives a good texture. You can use more protein powder or coconut flour if you don’t want to use almond flour. Again, the measurements will be different so add slowly and stir as you go.

Coconut flour: I think coconut flour works well in no bake desserts and I tend to mainly use it for that purpose. However, if you don’t want to use coconut flour, add in more protein powder or almond flour. As stated above, you will need to add slowly and stir as you go as coconut flour has a very different texture from any other flours.

Chocolate chips: any chocolate chips will work.

Graham crackers: you can use any graham crackers you want. You could also crush up cereal or really whatever you want.

Marshmallows: vegan marshmallows can be hard to find. I typically find mine at Whole Foods or Trader Joes. Obviously, if you aren’t vegan, you can use normal marshmallows.

Ingredients:

  • Vegan butter

  • Sugar

  • Nondairy milk

  • Protein powder

  • Almond flour

  • Coconut flour

  • Chocolate chips

  • Graham crackers

  • Marshmallows

Recipe:

  • ¼ cup vegan butter

  • ¼ cup sugar

  • ½ cup nondairy milk

  • 1/3 cup protein powder

  • 1/3 cup almond flour

  • 1/3 cup coconut flour

  • ½ cup chocolate chips (can do more or less)

  • ½ cup crushed graham crackers (can do more or less)

  • ½ cup marshmallows (can do more or less)

Directions:

1.    In a bowl melt the butter. Add in the sugar and nondairy milk. Stir to combine. Add in the protein powder, almond flour, and coconut flour. Stir until a dough is formed.

2.    Fold in the chocolate chips, graham crackers, and marshmallows. As stated above you can really do however much of these you would like. Once the add-ins are well combined, use a cookie scoop to scoop the dough. Repeat until all the done is used. Place the bites onto a plate or in a container. Store in the refrigerator.

3.    Optional: drizzle with melted chocolate or roll in more crushed graham crackers.

You can store the bites in the refrigerator or freezer. They should last up to 1 week in the refrigerator. Feel free to reach out with any questions.
