Sugar Cookie Nut Butter Bites

Easy, No Bake Recipe for Summer

Summer is the season of no-bake recipes. When it’s 80+ degrees outside no one wants to turn their oven on. That is another reason why I love this recipe.

  I looked through my pantry and refrigerator and saw the ingredients I had, and this recipe came to mind. It ended up turning out super delicious! I love that is uses a lot of simple and healthier ingredients. It isn’t super heavy but can satisfy a sweet tooth.

Almond flour: I haven’t tested any other flours in this recipe. I find the combination of almond flour and coconut flour work well together to create a good texture. If you are looking to substitute the almond flour you could try oat flour, more coconut flour, or protein powder. Keep in mind the measurements WILL BE different. I would recommend adding slowly and continuing to stir as you go.

Applesauce: I always use unsweetened applesauce, ideally a brand where the only ingredients are apples and water. You can use sweetened applesauce if you prefer. If you are looking to substitute the applesauce, I would try either mashed banana or more vegan yogurt.

Vegan yogurt: I used an almond milk based unsweetened vegan yogurt. Any vegan yogurt will work. If you aren’t vegan traditional yogurt should work too.

Coconut flour: as mentioned before, I haven’t tested any other flours and like the combination of coconut flour and almond flour in this recipe. If you are looking to substitute the coconut flour you could try more almond flour, oat flour, or protein powder. Again, as mentioned above these measurements will be different so add slowly and continue to stir as you go.

Almond butter: I like using almond butter for the taste; however, any nut or seed butter will work. Be sure it is on the runnier side rather than chunky.

Protein powder: I used a vanilla plant-based protein. Any flavor will work. I haven’t tested any whey-based proteins.

Chocolate: you can use any chocolate you prefer. You could also keep the bites as is and not coat them in chocolate.

Optional: maple syrup: if you are looking to make the recipe a little sweeter, you can add maple syrup or any liquid sweetener of your choice.

Ingredients:

  • Almond flour

  • Applesauce

  • Vegan yogurt

  • Coconut flour

  • Almond butter

  • Protein powder

  • Chocolate

  • Optional: maple syrup

Recipe:

Base:

  • 2/3 cup almond flour

  • ½ cup applesauce

  • ¼ cup vegan yogurt

  • ¼ cup coconut flour

  • Optional: 2-3 tablespoons maple syrup

Middle:

  • ½ cup almond butter

  • 3 tablespoons protein powder

  • Optional: 2-3 tablespoons maple syrup

 Top:

  • 1 cup chocolate

Directions:

1.    Line an 8x4 baking pan with parchment paper or spray with cooking spray. Set aside.

2.    In a bowl combine the almond flour and coconut flour. Stir well. Add in the applesauce, vegan yogurt, and maple syrup if using. Stir until a dough is formed. Press this dough into the baking pan and place in the freezer.

3.    In a bowl combine the almond butter and protein powder. Add in the maple syrup as well if you are using. Stir until a thick paste forms. Add this on top of the dough.

4.    Place back in the freezer for 1 hour.

5.    After the hour, cut into bite sizes or however you would like to cut the bites. Melt the chocolate and coat each bite into the chocolate. Place back in the freezer to allow the chocolate to harden (about 10-15 minutes).

Be sure to store these bites in the refrigerator or freezer. I prefer storing mine in the freezer to give more of an ice cream vibe. They should last up to 1 week in the refrigerator and about 1 month in the freezer. If you have any questions, feel free to reach out.
