3 Ingredient Brownies with Frosting

Brownies Packed with Nutrients

One of my favorite things is making recipes using vegetables. It is such an easy way to sneak in veggies without even tasting them. These brownies are no different. They are insanely fudgy while containing very nutritious ingredients.

The other best part about this recipe is that everything is just thrown into the blender and ready within 5 minutes. It truly doesn’t get easier than this three-ingredient recipe.

This recipe isn’t super sweet especially if you don’t add the frosting. If you would like you could add a sweetener to the mix. I would recommend either maple syrup or coconut sugar. You can add as much you prefer.

Not only are the brownies only three ingredients but the frosting is even less being two ingredients. All you do is combine your favorite chocolate with your favorite nut butter. It creates a super yummy and pretty healthy frosting.

These brownies are “healthy” enough to even be a breakfast. I tried to make this recipe as simple and approachable as possible. You can easily prep these in the beginning of the week and store them in the refrigerator as a snack, dessert, breakfast, etc.

The base of this recipe is plain; however, you can add in whatever you want. I’ve made this recipe a few times and each time I like to switch it up. You can switch up the nut butter, add cinnamon, add crushed nuts, add sprinkles, the list goes on.

Sweet potato: I like using traditional sweet potatoes. However, any type of sweet potato will work for example, Japanese sweet potatoes. You could also use butternut squash.

Cacao powder: I like using cacao powder for the extra nutrients. However, you could also use cocoa powder.

Almond butter: any nut or seed butter will work. I prefer almond butter for the taste. Be sure your nut butter is on the creamier side rather than chunky.

Chocolate chips: any chocolate chips will work. You could also use a chocolate bar.

Ingredients:

  • Sweet potato

  • Cacao powder

  • Almond butter

  • Chocolate chips

Recipe:

Brownies:

  • 1 2/3 cup cooked and mashed sweet potato

  • ¼ cup cacao powder

  • ½ cup almond butter

Frosting:

  • ½ cup chocolate chips

  • 1/3 cup almond butter

Directions:

1.    Line a baking pan with parchment paper or spray with cooking spray. Set aside.

2.    Cook your sweet potato however you would like. Allow to cool. Measure out the correct amount and add to the blender. Blend well.

3.    Add in the cacao powder and almond butter. Blend again until a batter forms.

4.    Add to the baking pan and place in the freezer for 30 minutes. After the 30 minutes, start to make your frosting by melting the chocolate chips in 30 second increments.

5.    Once the chocolate is fully melted, add in the almond butter, and stir well. Add on top of the brownies and enjoy!
