Banana Bread Protein Bites

Perfect Way to Use up Overripe Bananas

I know I can’t be the only one who somehow always ends up with so many overripe bananas on their counter. Sometimes banana bread gets boring and repetitive, so I decided to try this recipe instead using my overripe bananas. These turned out SO good! They are seriously addicting and super easy to make.

I love any recipe that has extra protein and is made with super simple ingredients and these bites cover both of those! They are also super versatile and can be made to your liking. You can switch the protein powder flavor to whatever you want. You can also add-in whatever you want. For example, you could replace the chocolate with raisins.

Bananas: be sure your bananas are ripe as they are the main source of sweetness in this recipe. If your bananas aren’t ripe yet but you want to make this recipe, microwave them without the peel in 30 second increments. After about 1 minute they should be ripe.

Vegan yogurt: I used unsweetened cashew milk yogurt. Any vegan yogurt will work. If you aren’t vegan, you could use normal yogurt as well. If you don’t have yogurt, you could substitute applesauce. I would recommend using an unsweetened yogurt and using either a plain, vanilla, or chocolate flavor.

Protein powder: I used vegan vanilla protein powder in this recipe. I haven’t tested any whey proteins in this recipe, only plant-based protein. Any flavor protein powder will work but I would recommend vanilla or chocolate.

Oats: I used rolled oats. I haven’t tested any substitutes for this.

Almond flour: I like using almond flour to keep it gluten-free. I haven’t tested any other flours; however, coconut flour should work. Keep in mind, the measurements WILL BE different. Coconut flour has a very different texture than almond flour and you will likely need a lot less.

Chocolate: any chocolate will work. You could also leave the chocolate out.

Ingredients:

  • Bananas

  • Vegan yogurt

  • Protein powder

  • Oats

  • Almond flour

  • Chocolate

Recipe:

  • 2/3 cup mashed banana (about 1 and ½ bananas)

  • ¼ cup vegan yogurt

  • 1 scoop protein powder (25g)

  • 2/3 cup rolled oats

  • 1 cup almond flour

  • 1 cup chocolate

Directions:

1.    Line a cookie sheet with parchment paper or spray with cooking spray. Set aside.

2.    In a bowl mash the banana. Add in the vegan yogurt. Mix well.

3.    Add in the protein powder, almond flour, and rolled oats. Mix well. Fold in ½ cup chocolate chips.

4.    Using a cookie scoop, scoop the batter onto the cookie sheet. Repeat until all the batter is used. Place in the freezer for 1-2 hours.

5.    After the time in the freezer, melt the rest of the chocolate. Coat each bite into the chocolate. Place back in the freezer to harden (about 10 minutes).

Be sure to store these in the refrigerator or freezer. I prefer to store mine in the freezer for more of an ice cream bar taste. Feel free to reach out if you have any questions at all!
