Chocolate Strawberry Loaf
Perfect Light Summer Dessert
If you’re looking for the perfect light and fluffy summer dessert, this is it. the strawberries give it a super fresh taste and since the frosting is made from yogurt it’s also super fresh and refreshing.
If you love anything strawberries and chocolate, you will love this.
Vegan butter: you can use any vegan butter you prefer. Be sure it is melted. If you aren’t vegan, normal butter also works. You can also use liquid oil if you don’t want to use butter, however, I find butter makes the recipe turn out better.
Sugar: I used a mix of white sugar and coconut sugar. You can use any granulated sugar you prefer. Be sure it is granulated such as monk fruit and not a liquid sweetener such as maple syrup. This will alter the outcome of the recipe.
Applesauce: I always use unsweetened applesauce. I find the loaf is sweet enough that you don’t need sweetened applesauce. If you don’t want to use applesauce, you could use mashed banana or pumpkin puree. I wouldn’t recommend substituting this unless you must.
Nondairy milk: I used unsweetened almond milk. Any nondairy milk will work. If you aren’t vegan, you can use traditional milk as well.
All-purpose flour: I haven’t tested any other flours in this recipe. The closest would be a 1:1 gluten-free all-purpose flour.
Almond flour: once again, I haven’t tested any other flours in this recipe. I prefer using almond flour to get a fluffy texture. You could try substituting this with oat flour, however, the measurements will more than likely be different.
Strawberries: you can use fresh or frozen strawberries just be sure there aren’t any huge chunks. You can also substitute these for any fruit of your choice.
Chocolate chips: the chocolate chips will be used for the frosting. You can use any chocolate chips you prefer. You could also use cocoa powder instead.
Vegan yogurt: the yogurt is for the frosting. I used unsweetened cashew milk yogurt. Any yogurt at all will work.
Ingredients:
Vegan butter
Sugar
Applesauce
Nondairy milk
Baking powder
All-purpose flour
Almond flour
Strawberries
Chocolate chips
Vegan yogurt
Recipe:
Loaf:
6 tablespoons vegan butter
2/3 cup sugar
2/3 cup applesauce
½ cup nondairy milk
2 teaspoons baking powder
1 1/3 cup all-purpose flour
½ cup almond flour
½ cup chopped strawberries
Frosting:
½ cup vegan yogurt
1/3 cup chocolate chips
Directions:
1. Preheat the oven to 350 degrees Fahrenheit. Line a baking pan with parchment paper or spray with cooking spray. Set aside.
2. In a bowl melt the butter. Add in the sugar, applesauce, and nondairy milk. Stir well.
3. Add in the baking powder, all-purpose flour, and almond flour. Stir until a batter is formed. Fold in the chopped strawberries (I would recommend coating the strawberries in a few tablespoons of all-purpose flour). Transfer the batter to the baking pan.
4. Bake for 45 minutes- 1 hour.
5. For the frosting: melt the chocolate chips and stir in the yogurt.
6. Once completely cooled, optional: add the frosting.
Be sure to store this loaf in the refrigerator or freezer. It should last up to 1 week in the refrigerator. If stored in the freezer, it should last up to 1 month or more. Feel free to reach out if you have any questions about this recipe!
