Fluffy Cake Donuts

Any fruity dessert is always a win in my eyes. I’ve been obsessed with everything blueberry so obviously had to make blueberry donuts. I added the addition of a drizzle of melted white chocolate on top and they turned out SO delicious!

I love that these donuts are light and fluffy and not super sugary. They are perfect for the spring and summer time. They are definitely a crowd pleaser.

When making donuts, I always use a silicone donut pan. These make it way easier to remove the donuts and you don’t have to worry about them getting stuck in the pan. I got mine on Amazon.

TIP: before adding the blueberries to the batter, coat them in all-purpose flour. You only need about a tablespoon. This prevents the blueberries from all sinking to the bottom. It also helps the batter not turn purple if you are using frozen blueberries.

Vegan butter: any vegan butter will work. If you prefer oil, that should work too. Make sure it is melted oil and butter.

Sugar: any granulated sugar will work. I used coconut sugar to keep it refined sugar free. Make sure it is GRANLUATED (white, brown, monk fruit, etc.) not liquid.

Blueberries: you can use fresh or frozen. If you prefer a different fruit, any will work.

White chocolate: the drizzle is optional, but I would definitely recommend. I find my vegan white chocolate on Amazon, any will work.

I would not recommend substituting the flours in this recipe. They each work together to create the perfect fluffy texture. I haven’t tested any other flours.

If you don’t want to use the white chocolate drizzle on this, a glaze would also be really good. You can just combine powdered sugar and nondairy milk to make it. A vanilla frosting would also be really good.

This recipe is pretty versatile as well. The batter is just a base, and you can add in whatever you want. Chocolate chips, sprinkles, nuts, etc.

 Ingredients

  • Vegan Butter

  • Applesauce

  • Water

  • Sugar

  • Baking powder

  • All-purpose flour

  • Almond flour

  • Blueberries

  • White chocolate

Recipe:

  • 1/3 cup applesauce

  • 3 tablespoons melted butter

  • ¼ cup water

  • 1/3 cup sugar

  • 1 teaspoon baking powder

  • 1/3 cup all-purpose flour

  • 2/3 cup almond flour

  • ½ cup blueberries

  • ½ cup white chocolate (melted)

Directions:

1.    Preheat your oven to 350 degrees Fahrenheit.

2.    In a small bowl, melt your butter.

3.    Transfer the butter to a larger bowl, and add the applesauce, water, and sugar.

4.    Mix to combine.

5.    Add in the baking powder, all-purpose flour, and almond flour.

6.    Stir until the batter forms.

7.    Fold in the blueberries.

8.    Pour into your donut pan.

9.    Bake for 25 minutes.

10. Allow to completely cool, then drizzle with the melted white chocolate.

Store in an airtight container in the refrigerator. You can also store these in the freezer if you want them to last longer. in the refrigerator they should last up to 5 days.
