No Bake Chocolate Strawberry Cups

Refreshing Summer Dessert

There is no better summer treat than a recipe that has fruit but is also no bake. These cups are super refreshing and not overly sweet. They are made with super simple ingredients and are on the healthier side if that’s something you’re looking for. The main source of sweetness is from fruit as there is only ¼ cup of added sugar. You could use no sugar added chocolate as well to cut the sugar if that’s what you prefer.

I love switching up the fruit I use each time I make these. They are truly the best summer treat.

Cacao powder: I like using cacao powder for the extra nutrients. You can use cocoa powder as well. You could also leave this out if you don’t want these to be chocolate. If you’re leaving this out, you would need to add more coconut flour.

Coconut flour: I like using coconut flour to keep the recipe gluten and grain free. You could add protein powder in place of this or almond flour. Keep in mind the measurements WILL BE different. I recommend slowly adding and stirring until you reach a dough consistency.

Coconut sugar: this is my sugar of choice for this recipe to keep it refined sugar free, however, any granulated sugar will work. I haven’t tested liquid sweeteners in this recipe.

Nondairy milk: I used unsweetened almond milk. Any nondairy milk will work. If you aren’t vegan, traditional milk will work too.

Banana: be sure your banana is ripe as this is one of the main sources of sweetness in the recipe. If your bananas aren’t ripe yet but you want to make this recipe, you can microwave them in 30 second increments. Be sure to peel them before you do this.

Strawberries: you can use fresh or frozen strawberries. If you don’t want to use strawberries any fruit will work.

Chocolate: any chocolate will work.

Ingredients:

  • Cacao powder

  • Coconut flour

  • Sugar

  • Nondairy milk

  • Banana

  • Strawberries

  • Chocolate

Recipe:

 Base:

  • ¼ cup cacao powder

  • ½ cup coconut flour

  • ¼ cup sugar

  • 1/3 cup nondairy milk

  • 1 banana

Middle:

  • 1 cup mashed strawberries

Top:

  • 2 cups chocolate

Directions:

1.    In a bowl combine the cacao powder, coconut flour, and sugar. Add in the nondairy milk and mashed banana. Stir to combine. Transfer mixture to cupcake liners. Push down to flatten.

2.    Add about 2 tablespoons of the mashed strawberries on top of the base mixture. Place in the freezer for 1 hour. After the hour, melt the chocolate and fully coat each cup in chocolate. You could also just add the chocolate to the top if you prefer. Place back in the freezer to allow the chocolate to harden (about 5 minutes).

I like storing the cups in the freezer; however, you can store them in the refrigerator as well. Be sure they are in an airtight container. They should last 1 week in the refrigerator. If you have any questions, feel free to reach out!
