No Bake Vegan Snickers Bars
All The Candy Lovers, These No Bake Vegan Snickers Are For You
If you are like me and love candy but want something a little healthier or are vegan now and can’t eat traditional candy you HAVE to try these. Snickers weren’t always my favorite candy growing up, but something about these are just so good.
They are no bake and use all simple and healthier ingredients that you probably already have on hand. I absolutely love having these in my freezer for nights when I’m craving something sweet. They taste super decadent but really are made with natural ingredients. This recipe is also perfect for anyone with a peanut allergy as traditional snickers contain peanuts these do not. I use cashews instead. Any nut will work, or you can just omit completely.
For the “caramel” layer I love using dates. They have a natural sweetness to them that tastes so good and works perfect for this recipe. I prefer medjool dates, but any will work. If you’ve never had dates before I would highly suggest trying them, they taste like candy but really have tons of health benefits.
Make sure to store these in the freezer in an airtight container for the best taste and to ensure they last as long as possible. Storing them in the fridge they can last for a very long time.
Ingredients
Almond butter
Maple syrup
Almond flour
Dates
Vegan chocolate
Cashews
Recipe
Base:
½ cup almond butter
¼ cup maple syrup
1 cup almond flour
Middle:
7-8 large dates
Toppings:
1 ½ cup vegan chocolate
1/3 cup cashews (or nut of choice)
Directions
In a bowl add your dates and pour boiling water.
Push them to the side and let them sit while making the base.
In a mixing bowl, add almond butter and maple syrup.
Stir until combined.
Add in the almond flour.
Stir until the dough forms.
Press down into a 9x5 baking pan.
Place in the freezer.
Drain all the water from the dates BESIDES about 1-2 tablespoons.
Mash the dates with a fork until a paste forms OR add them to a blender and blend.
Once the paste forms add them on top of the base layer along with your cashews.
Place in the freezer for 40 minutes.
After the 40 minutes cut into bars or however you want.
Dip each piece into your melted vegan chocolate.
Place back in the freezer to harden.
