Two Of the Best Ingredients Combined into One

When making this loaf I thought to combine all my favorite ingredients into one. Banana, chocolate, and Oreos. What could be better than that?!

Make sure your bananas are ripe. The browner, the better. The riper they are, the sweeter they are.

TIP: if you want to make this recipe and your bananas aren’t ripe, put them in the oven. All you have to do is put them on a baking tray in the oven at 300 degrees Fahrenheit and just watch them. Once they turn a dark brown color, they will come out perfectly ripe. 

This recipe can also be made into muffins. You would do the same thing, just add the batter to a cupcake tray.

Since this is a vegan recipe, I use flax eggs instead of traditional eggs.

How to make a flax egg:

For one egg the ratio is 1 tablespoon of flax seed meal to 3 tablespoons of water. For two, just double that. All you have to do is combine the ingredients, give it a quick mix, and allow it to set. After 5-10 minutes it will have formed into an egg-like texture.

Almond milk: you can use any nondairy milk of your preference.

Almond butter: I prefer using this as it doesn’t overpower the main ingredients. You can use any nut or seed butter you prefer.

Sugar: any granulated d sugar will work. I used coconut sugar in this recipe.

Almond flour: I wouldn’t recommend substituting it. However, the closest flour to it would be oat flour.

Chocolate chips: if you prefer to use a chopped chocolate bar you can also do that. You can also just omit the chocolate chip if you don’t want them in the recipe. 

Oreos: Any type of cookie works if you don’t want to use Oreos. Obviously, Oreos are the main part of the recipe, but not necessary. 

 Ingredients:

  • Bananas

  • Flax eggs

  • Almond milk

  • Almond butter

  • Sugar 

  • Baking powder

  • Almond flour 

  • Oreos 

  • Chocolate chips 

  • Optional: frosting

Recipe:

  • 2 bananas 

  • 2 flax eggs

  • ½ cup almond milk

  • ½ cup almond butter

  • ¼ cup sugar

  • 2 teaspoons baking powder

  • 1 cup almond flour

  • 1/3 cup chocolate chips

  • 7-10 Oreos

Directions:

1.    Preheat your oven to 350 degrees Fahrenheit.

2.    Line a 9x5 baking pan with parchment paper or cooking spray.

3.    In a bowl add the flax seed meal and water.

4.    Set aside.

5.    In a large bowl mash, the bananas.

6.    Add in the almond milk, almond butter, and sugar.

7.    Add in the flax eggs.

8.    Mix well.

9.    Add in the baking powder and almond flour.

10.Mix well.

11.Fold in the chocolate chips and Oreos.

12.Add to baking pan.

13.Bake for 40-50 minutes.

14.If you are adding icing, allow the loaf to completely cool.
