Protein Chocolate Peanut Butter Cups
No-Bake, Homemade Candy
Peanut butter and chocolate will always be one of the best combinations. Since becoming vegan and not being able to eat Reece’s cups anymore I had to make my own. They taste the exact same to me as the ones you buy at the store and take hardly any time to make. They are also made with a lot simpler ingredients.
There are a million different combinations of flavors you could do. That’s another reason why I love making them homemade. You really can customize them to taste however you want.
Some of my favorite combinations:
White chocolate, peanut butter, crushed rice cereal.
Chocolate, peanut butter, slice of banana.
White chocolate, peanut butter, jelly.
Chocolate, cashew butter, vanilla protein powder.
TIP: when melting the chocolate add ½ teaspoon of coconut oil to the bowl. The oil makes it a lot easier to work with the chocolate because of how smooth it gets.
Peanut butter: you can use any nut or seed butter. I like switching it up every time I make these.
Protein powder: I used a vanilla flavored protein powder. You can use any flavor you want. If you don’t want to use protein powder, you could use coconut flour or almond flour. The measurements will be DIFFERENT. Add slowly and mix as you go.
Chocolate: you can use any chocolate you want. I typically use vegan chocolate chips. White chocolate also works well.
Crushed nuts: I used cashews. You can use any nut you want, or you could use cereal. It adds a nice crunch.
Ingredients:
Peanut butter
Protein powder
Water
Chocolate
Optional: crushed nuts
Recipe:
Makes only 3 large cups or 6 small ones. Double for more.
¼ cup peanut butter
¼ cup protein powder
3 tablespoons water
1 cup chocolate
Optional: 2-4 tablespoons crushed nuts
Directions:
1. In a bowl mix together the peanut butter, protein powder, and water. Place in the refrigerator.
2. In a separate bowl melt HALF (1/2 cup) the chocolate.
3. If you are adding crushed nuts, stir them in. Add 2 tablespoons of chocolate to each cupcake liner.
4. Transfer to the refrigerator for 30 minutes or until chocolate is completely hardened.
5. Once harden add 2 tablespoons of the peanut butter mixture to each.
6. Finally, melt the rest of the chocolate, add on top, and place back in the refrigerator.
Be sure to store the cups in the refrigerator or freezer. The cups should last up to 5 days in the refrigerator. You can prep a large batch and store in the freezer. It should last for a month minimum. I prefer storing mine in the freezer for an ice cream type dessert.
