Pecan Pie Brownies

Delicious Holiday Treat

With Thanksgiving coming up, I had to remake one of my favorite recipes from last year. These pecan pie brownies are so simple to make and always taste delicious. If you want the pecan pie type dessert but don’t feel like making a whole pie, this recipe is for you!

I love topping my brownies with melted chocolate and a scoop of ice cream. You would never guess this recipe is vegan, it seriously tastes so delicious.

Sugar: I used coconut sugar to keep this recipe refined-sugar-free. Any granulated sugar will work. Be sure it is granulated, liquid sweeteners such as maple syrup won’t work.

Vegan butter: any vegan butter will work. If you aren’t vegan traditional butter also works. You could also use liquid oil.

Applesauce: I always use unsweetened applesauce. If you don’t want to use applesauce, you could use mashed banana, pumpkin, mashed sweet potato, or oil. I wouldn’t recommend substituting the applesauce though.

Almond butter: any nut or seed butter will work. I would recommend ones with subtle flavor such as sunflower seed butter or cashew butter.

Cacao powder: you can also use unsweetened cocoa powder as well.

Almond flour: I haven’t tested any other flours. The closest flour would be oat flour.

Dates: be sure to soak your dates first. This will help create a smooth paste. If you don’t want to use dates, you could melt any caramel candy. You could also mixture together any nut butter and maple syrup.

Ingredients:

  • Sugar

  • Vegan butter

  • Applesauce

  • Almond butter

  • Baking powder

  • Cacao powder

  • Almond flour

  • Dates

  • Pecans

Recipe:

  • 2/3 cup sugar

  • 8 tablespoons vegan butter

  • 2/3 cup applesauce

  • ½ cup almond butter

  • 2 teaspoons baking powder

  • 2/3 cup cacao powder

  • 1 cup almond flour

  • 8-10 dates

  • 1/3 cup roughly chopped pecans

Directions:

1.    Preheat the oven to 350 degrees Fahrenheit.

2.    Line a baking pan with parchment paper or spray with cooking spray.

3.    If the dates have pits, remove the pits, and add to a bowl. Cover in boiling water and set aside.

4.    In a bowl melt the butter. Add in the sugar, applesauce, and almond butter. Stir well.

5.    Add in the baking powder, cacao powder, and almond flour. Mix until a batter is formed.

6.    Transfer to the baking pan.

7.    Drain all the water from the dates BESDIES about 1-3 tablespoons. Use a fork to mash until a paste is formed. You could also add this to a blender.

8.    Once a paste is formed, add on top of the brownie mixture. Spread evenly. Add the chopped pecans on top and bake for 30-40 minutes.

9.    Optional: add melted chocolate on top.

Be sure to store the brownies in the refrigerator or freezer. The brownies should last up to 5 days in the refrigerator. You can prep a large batch and store in the freezer. It should last for a month minimum.
