Powdered Sugar Pumpkin Donut Bites

No-bake, protein packed donut bites

The donut holes from Dunkin were always one of my favorite desserts growing up. Since its fall I decided to add a twist and add pumpkin to mine. They taste super delicious and come together in such a short amount of time.

This recipe is also very allergen friendly as compared to Dunkin. This recipe is gluten-free, dairy-free, egg-free, and can be made nut-free. It’s also no-bake so you don’t have to worry about turning the oven on.

My favorite part is that everything is made in one bowl, so it makes for a super easy clean up. I would highly recommend trying this recipe for fall!

Sugar: I used coconut sugar to keep it refined-sugar-free. You can use any sugar you prefer. I would recommend a granulated sugar such as white sugar. If you use a liquid sweetener such as maple syrup it will affect the measurements of the dry ingredients. You will probably need more!

Nut butter: you can use any nut or seed butter you prefer. I would recommend one with a subtle flavor, so it doesn’t overpower the whole recipe. Almond or cashew butter are my favorites!

Protein powder: I used a plant-based vanilla protein powder. You can use any flavor you want. If you don’t want to use protein powder, you could use more almond flour or coconut flour. The measurement will more than likely be DIFFERENT so add slowly.

Almond flour: you can replace this with more protein powder, coconut flour, or oat flour. Again, the measurement will be different so add slowly.

Powdered sugar: you can use any powdered sugar you want. You could also leave these as is or coat in chocolate, a glaze, etc.

Ingredients:

  • Pumpkin puree

  • Sugar

  • Nut butter

  • Protein powder

  • Almond flour

  • Powdered sugar

  • Optional: cinnamon

Recipe:

  • 1 cup pumpkin puree

  • ¼ cup sugar

  • 1/3 cup nut butter

  • ½ cup protein powder

  • 1 cup almond flour

  • About ½ cup powdered sugar (enough to coat each bite)

  • Optional: 1 teaspoon cinnamon

Directions:

1.    In a bowl combine the pumpkin puree, sugar, and nut butter.

2.    Add in the protein powder and almond flour. Stir well. If you’re adding cinnamon, add here.

3.    Once a dough is formed use a cookie scoop or normal spoon to scoop all the dough. Roll into balls and place on a plate or cookie sheet.

4.    Place in the freezer for 30 minutes. After the 30 minutes coat each bite in the powdered sugar.

Be sure to store the bites in the refrigerator or freezer. The bites should last up to 5 days in the refrigerator. You can prep a large batch and store in the freezer.
