Pumpkin Energy Bites

Easy on the go Snack

These pumpkin energy bites are the snack of fall! You only need five main ingredients as the chocolate chips and cinnamon are optional.

These bites have healthy fats from the almond butter, are high in protein from the protein powder, and are packed full of nutrients.

 If you wanted to up the nutrients even more, you could add hemp seeds, chia seeds, or flax seeds.

These bites only have ¼ cup of added sweetness making them the best snack, breakfast, or dessert. They won’t spike your blood sugar and will keep you satisfied.

I love how easy it is to take these on the go. Just pop a few in a plastic bag and you are good to go! I always prep a large batch at the beginning of the week, so I have easy and healthy snacks all week long.

Pumpkin puree: be sure you are using pumpkin puree and not pumpkin pie filling.

Almond butter: I used almond butter in this recipe as I like the taste of it. Any nut or seed butter will work. You want it to be on the creamier side rather than chunky.

Maple syrup: you can substitute for any liquid sweetener of choice. Example: honey (if you aren’t vegan), agave, etc.

Oats: I used rolled oats in this recipe. Quick oats should also work.

Protein powder: I used a plant-based vanilla protein. You can do any flavor you want. I haven’t tested any whey-based protein.

Cinnamon: the cinnamon is optional; however, I find it adds good flavor. You can also add any other spices you’d like.

Chocolate chips: any chocolate will work. You could even do white chocolate if you prefer.

Ingredients:

  • Pumpkin puree

  • Almond butter

  • Maple syrup

  • Oats

  • Protein powder

  • Cinnamon

  • Chocolate chips

Recipe:

Makes 12 bites

  • ½ cup pumpkin puree

  • ¼ cup almond butter

  • ¼ cup maple syrup

  • 1 cup oats

  • ¼ cup protein powder

  • 1 teaspoon cinnamon (optional)

  • ½ cup mini chocolate chips

  • 1 cup chocolate chips

Directions:

1.    In a bowl combine the pumpkin puree, almond butter, and maple syrup.

2.    Add in the oats, protein powder, and cinnamon if using. Stir until a thick batter is formed. Fold in the mini chocolate chips.

3.    Use a cookie scoop to scoop the dough. Roll into balls with your hands.

4.    Place onto a plate or flat surface. Allow to chill in the refrigerator for about 1 hour.

5.    After the hour, melt the 1 cup of chocolate. Coat each bite in chocolate. Place back in the refrigerator to harden. Enjoy!

 Be sure to store the bites in the refrigerator or freezer. The bites should last up to 5 days in the refrigerator. You can also store these in the freezer. They should last for up to a month.
